Sweet Potato Fries with Garlic Aioli 🍠
A delicious whole food side or snack to add to your meals! Sweet potatoes are an excellent source of vitamin A, vitamin C, and fiber, and are delicious on their own or paired with this garlic aioli.
Here's how to make it:
Ingredients -
2 large sweet potatoes
1 tbsp avocado oil
1/4 tsp salt
For the garlic aioli -
1 large garlic clove, minced
1/2 tsp salt
1 egg
1/2 lemon, juiced
1 cup avocado oil
2 tbsp fresh parsley, minced (or 2 tsp dried parsley)
1/2 tsp water
Instructions -
1. Preheat oven to 425F
2. Wash and peel sweet potatoes, and cut into 1/2" wide fries
3. Place fries on parchment lined baking sheet. Drizzle with avocado oil and season with salt. Toss to coat evenly.
4. Roast fries in oven for 40 min, flipping them halfway through.
5. While fries are roasting, make the aioli:
to a 1 pint mason jar, add egg, salt, lemon juice, garlic, and avocado oil. Set immersion blender at bottom of jar, turn on blender, and slowly draw it up to the surface as it emulsifies and thickens. Once thoroughly mixed, add parsley and water and blend once more to incorporate. Store aioli in the fridge until fries are done.
6. Once fries are done roasting, remove them from oven and enjoy with a dollop of garlic aioli on the side for dipping.
