Here is a tasty recipe for a 4th of July Celebration

Corn and Quinoa Salad with Lemony Mint Dressing

Ingredients

4 ears of corn in their husks
1 cup quinoa, rinsed well
1 teaspoon salt
4 scallions, white and tender green parts, thinly sliced then chopped
½ cup fresh mint leaves, cut into thin ribbons then chopped
1 tablespoon lemon zest
¼ cup lemon juice
2 tablespoons honey (preferably unfiltered)
¼ cup olive oil
¼ teaspoon freshly ground black pepper

Directions

Put the corn (in the husk on the grill). Roast for about five minutes, turning until done. If you don’t feel like roasting it, cook it however you want, just don’t do it for long, only about 5 minutes or so. Let the corn cool slightly. Shuck then cut kernels from the cob with a sharp knife. Put the corn in a large bowl.
Combine the quinoa with 2 cups of water and ½ teaspoon salt in a medium saucepan and bring to a boil. Cook for 8-10 minutes, until all of the water has been absorbed. Remove from the heat, fluff, and set aside for 5 minutes.
Add the scallions and the mint to the roasted corn. Add the quinoa, the remaining 1/2 teaspoon salt, the lemon zest, lemon juice, honey, olive oil, and pepper, and toss well. Cover and allow the salad to marinate for at least 2 hours before serving.

LISTEN,
I want to tell you something. This morning
is bright after all the steady rain, and every iris,
peony, rose, opens its mouth, rejoicing. I want to say,
wake up, open your eyes, there’s a snow-covered road
ahead, a field of blankness, a sheet of paper, an empty screen.
Even the smallest insects are singing, vibrating their entire bodies,
tiny violins of longing and desire. We were made for song.
I can’t tell you what prayer is, but I can take the breath
of the meadow into my mouth, and I can release it for the leaves’
green need. I want to tell you your life is a blue coal, a slice
of orange in the mouth, cut hay in the nostrils. The cardinals’
red song dances in your blood. Look, every month the moon
blossoms into a peony, then shrinks to a sliver of garlic.
And then it blooms again.
