🥩🦴 Nose-to-tail: the ultimate way to honor the animal and nourish our bodies.

At Captain Soup, we’re working toward a system where nothing goes to waste. Why? Because some of the most powerful nutrition on the planet isn’t just found in muscle meat — it’s also found in the organs.

Often called “nature’s multivitamin,” organ meats are packed with vitamins A, D, E, and K plus key minerals like iron, zinc, and selenium that support energy, immunity, and deep nourishment.

Even adding organs like liver, heart, or kidney to bone broth can dramatically increase its nutrient density. Our broth already includes lamb bones and lamb liver, and we’re continuing to expand toward a full nose-to-tail approach.

It’s a better way to farm — honoring the animal, reducing waste, and delivering the most nutrient-dense food possible. 🌿

🐑 Spring has officially arrived at the farm.

The newest lambs at City on a Hill Farm are learning one of the most important skills in the flock: how to run together. When the flock moves, everyone moves — and the little ones are figuring it out one step (or leap) at a time.

One lamb in particular, Malcachino, had his own unique strategy for keeping up. Instead of running like the rest… he started prancing and leaping into the air as fast as he could to catch the flock. Safe to say, it worked — and gave us a good laugh along the way.

Moments like this are part of what makes regenerative farms so special. Animals living naturally, learning from the herd, and doing what they were made to do. 🌱

And yes… the lamb zoomies are very real.

The Beauty of Listening to the Land 🐄🌿

Why does Captain Soup taste different? Because it starts with a farmer who knows how to listen.

Brian’s workday at City on a Hill Farm isn't about micro-managing; it’s a daily lesson in humility. While industrial systems try to force the land to follow a human schedule, Brian spends the majority of his time listening and attending to the needs of the animals and land. This is stewardship in its purest form- intervening just enough to allow a natural system to thrive on its own terms. 🌿

There is a quiet beauty in a life lived in tune with the land—listening with care rather than forcing a plan. When we honor the land's natural rhyhm, we create a thriving ecosystem that produces the most nutrient-dense, high-quality food possible. 🥣✨

Overfed but undernourished? 📉 That is the reality for the average American getting 60% of their calories from ultra-processed sources.

We’re on a mission to change that. Following up on our last post about supporting the mission regenerative agriculture serves, let’s talk about the "Protein Gap." High-quality, ethically raised protein is rare and hard to find, especially when grocery store shelves are filled with "natural" labels that mask the reality of industrial feedlots.

That’s where we come in. 🥣🥩
Captain Soup was created to make regenerative nutrition accessible. We do the hard work of sourcing from trusted, pasture-centered systems so you can enjoy nutrient-dense food with ease.
Stock your freezer with locally-trusted food from family farms. Our soups are packed with nose-to-tail meat and slow-cooked bone broth from regenerative farms.

“Go find a farmer and never let them go.” 🤝👨‍🌾

The truth is, the industrial food system is often worse than we think. When you buy from a grocery store, that meat likely comes from CAFOs (Concentrated Animal Feeding Operations) where you can’t know how the animal or plant was treated. 🚫🥩

The solution is a return to resilient local farmers in our communities. By sourcing from a local, regenerative network, you ensure your food comes from people you trust and land that is being enriched, not depleted.

What does it look like to support regenerative agriculture in your own community? 🏡 Captain Soup CEO and farmer Brian Gaudette shares three key ways to get involved today:
✅ Know your farmer👨‍🌾: Look for and support local farmers who sell meat, eggs, and produce. When you buy from a grocery store, you can’t necessarily know how that animal or plant was treated. 🐓
✅ Start your own backyard garden or chicken coop. 🐓
✅ Build a resilient, local food community. 🌿

It’s time to move away from global monocrops and back to the resilient local village that looks after one another. 🏡🍎

The current food system depletes the soil—and as a result, it's depleting us. It’s time to choose a system that heals instead. 📉🌿

Captain Soup Founder Brian Gaudette, and Director of Operations Alex Lonnquist dive into the "why" behind our health crisis and how regenerative farming is the solution. As Mark Hyman, MD remarks: if we stop subsidizing corn and soy, the shift to regenerative agriculture will happen naturally.
When we stop making giant monocrops artificially beneficial, the world will see that regenerative systems are actually more productive and resilient over time. 🌿

The Path Forward:
🚫 Remove the Middleman: We need to peel back the regulations that let the state stand between the farmer and the customer.
🏡 Go Local: The future is less global and more community-focused. By prioritizing local food sources, we rebuild the connection between the land and our health.
🌱 Grassroots Action: It starts with us. By taking responsibility for our food sources, we create a movement that values soil health and animal stewardship.

It’s time to uproot a system that depletes us and plant one that heals us.

Ready to change the system? Stay tuned for more ways you can support the mission regenerative agriculture serves: healing the planet and us! 🌱

What happens when you realize there is no downside to doing things the right way? 🌱
When Brian started learning about regenerative agriculture, the benefits were undeniable. It heals the soil, it heals the planet, and most importantly, it produces the most healing food on earth.
But for Brian, just sourcing ingredients for Captain Soup wasn’t enough. He didn't just want to support the movement from a distance—he wanted the health, the vitality, and the life that only comes from being a farmer himself. 👨‍🌾✨
He traded the military life for a life in the pasture, choosing to become a steward of the land so he could experience that healing process from the ground up.

Real Food is Finally Center Stage 🥦🥩🥣
The conversation around nutrition has officially shifted. The newly released 2025–2030 Dietary Guidelines for Americans represent the most significant change in decades, placing a powerful emphasis on real, whole food as the foundation of health.
With the federal government now advising a "war" on highly processed foods and a return to nutrient density, it’s the perfect time to look at the protocols that have championed this approach for years.

What sets apart GAPS, AIP, Keto, Paleo, and The Wahls Protocol? While each has a unique focus, they all share one core mission that perfectly mirrors the new U.S. guidelines: nourishing the body with high-quality protein and healthy fats while avoiding industrial junk.
✨ GAPS: Focuses on gut repair and the gut-brain connection.
✨ AIP: Calms inflammation to support autoimmune health.
✨ Keto: Prioritizes healthy fats for metabolic and brain energy.
✨ Paleo: A return to the whole, ancestral foods our bodies recognize.
✨ Wahls: Specifically nourishes mitochondria and cellular function.
Captain Soup: Built for the New Standard of Health👇

We didn't have to change our recipes to meet the new guidelines—we were already there. Whether you are following a specific protocol or just looking to align with the new "Make America Healthy Again" standards, Captain Soup makes it simple.

❌ NO industrial seed oils.
❌ NO added sugars (the new guidelines now recommend zero added sugar).
❌ NO processed ingredients.
✅ YES to nutrient-dense meals that are at least 94% fat and protein—featuring high-quality animal proteins, organic vegetables, and nourishing, real-food fats already cooked for your convenience!

A new year, and a reminder that healing doesn’t always happen where we expect it 🌱✨

While recovering from illness, Brian split his time between an Army recovery unit during the week and life on the farm on weekends. Though surrounded by providers and a care team dedicated to helping him heal, he felt his best—mentally and physically—when he was outdoors cutting wood, tending animals, and working the farm land with his family. Farm life gave him purpose, movement, and vitality in ways focused healthcare could not.

In this interview, Alex Lonnquist sits down with Captain Soup founder & CEO Brian Gaudette for a powerful, on-the-farm conversation. For the first time, Brian shares the story of the last five years— from illness and recovery, to regenerative agriculture inspired by Joel Salatin, to building City on a Hill Farm and vertically integrating Captain Soup.

For anyone entering the New Year craving a healthier, simpler way of living and healing—this conversation is for you🌿
