We got our Spelt flour today and I started a sour dough starter. Spelt is very close to the original wheat that God created. It is much more delicate than modern wheat and when it is used to make sour dough, it is even closer to the original einkorn wheat. So, it is good for people who are sensitive to gluten.

STOP DIETING!

We tend to go up and down with our weight, on and off with the different and latest diet rages, and don't see the results we want because we are focused on the FDA and USDA "approved" dietary "norms" ... MACRONUTRIENTS (calorie laden fats, proteins, and carbohydrates) ... which force us to spend time "counting calories" instead of enjoying them. We all HAVE to have the roughly 2000 calories daily needed to maintain our proper body weight. But, these are EMPTY calories ... calories that have no beneficial value to our bodies except weight gain!!!

Instead, we need to focus on the healthy benefits of MICRONUTRIENTS (vitamins, minerals, phytonutrients, etc.) which help us to maintain the energetic, healthy vitality we all want ... the KEY to maintaining a healthy body weight! Forget dieting, calorie counting, portion weighing, and so forth! Live life to its FULLEST!

Researching eye nutrition, I found this information in: www.allabout vision.com. Dark leafy veggies are high in lutein and zeaxanthin. These plant nutrients can prevent age related vision loss such as macular degeneration. Wonderful news for those of us who drink delicious green smoothies every day.

Cardiovascular disease, diabetes and eye conditions including cataracts and age-related macular degeneration (AMD) have been shown to occur less frequently in people who eat diets rich in vitamins, minerals, healthy proteins, omega-3 fatty acids and lutein.

All healthy diets should include ample amounts of fresh, colorful fruits and vegetables. In fact, experts recommend that you consume at least five to nine servings of these foods daily.

Choose dark green or brightly colored fruits and vegetables to obtain the most antioxidants, which protect your eyes by reducing damage related to oxidizing agents (free radicals) that can cause age-related eye diseases.

Lutein and zeaxanthin are plant pigments called carotenoids that have been shown to protect the retina from oxidative changes caused by ultraviolet light. Spinach and kale are excellent food sources of lutein and zeaxanthin, which are also found in sweet corn, peas and broccoli.

Vitamin A, vital for healthy vision, is found in orange and yellow vegetables such as carrots and squash. Fruits and vegetables also provide essential vitamin C, another powerful antioxidant.

New Mexican Cheddar Cheese

Ingredients:
• ½ red bell pepper
• ¼ cup nutritional yeast
• ¼ cup Bragg’s apple cider vinegar
• 2 Tablespoons filtered water
• 1 Tablespoon lime or lemon juice
• 4 cloves garlic (minced) or 1 teaspoon garlic powder
• ½ teaspoon Himalayan salt
• 1 teaspoon oregano
• ¼ teaspoon cumin
• Red and Green Chile powder to taste
• ½ cup cashews

Instructions:
• Coarsely chop the bell pepper.
• Combine all the ingredients in a Vitamix blender.
• Blend into a creamy cheese.

Note:
If you don’t have a high power blender, like a Vitamix, soak the cashews for an hour or so, and chop the red bell pepper finely before blending.
