Amazing Instant Pot Goat Curry
Yields: 4 servings
Prep time: 15 minutes
Cook time: 45 minutes
Ingredients
For the Goat & Marinade:
• 3 lbs cubed goat meat
• 1 cup Greek yogurt
• 1 tablespoon garam masala
• 1 teaspoon red pepper flakes (or to taste)
• 1 teaspoon turmeric powder
• 1 teaspoon ground cumin
• Salt and black pepper to taste
For the Curry Base:
• 2 tablespoons oil or ghee
• 2 medium onions, finely sliced
• 4-5 cloves garlic, finely chopped
• 2 large tomatoes, finely chopped
• 1 cinnamon stick (1-inch long)
For Serving:
• 1.5 cups rice
• 3 cups water
Optional Garnish:
• 1 bunch fresh cilantro, chopped
• 1 lime, cut into wedges
Instructions
1. Marinate the Goat:
In a large bowl, combine the cubed goat meat, Greek yogurt, garam masala, red pepper, turmeric, cumin, salt, and pepper. Mix thoroughly until the goat is evenly coated. Set aside.
2. Sauté the Aromatics:
Set your Instant Pot to the Sauté function. Add oil or ghee. Once hot, add the sliced onions and the cinnamon stick. Sauté, stirring occasionally, until the onions turn soft and golden brown. Add the chopped garlic and cook for one more minute until fragrant.
3. Create the Curry Base:
Stir in the finely chopped tomatoes and allow the mixture to simmer for 2-3 minutes, letting the tomatoes break down into a thick sauce.
4. Pressure Cook the Curry:
Add the marinated goat and any remaining marinade into the Instant Pot. Stir to combine everything. Secure the lid, set the steam valve to Sealing, and cook on the Meat/Stew setting for 30 minutes at high pressure.
5. Cook the Rice:
While the curry is cooking, prepare your rice on the stovetop or in a rice cooker.
6. Finish and Serve:
Once the Instant Pot has finished, let the pressure release naturally for 10 minutes before carefully switching the valve to "Venting" to release any remaining steam. Open the lid, stir in the fresh cilantro and a squeeze of lime juice.
Serve the delicious goat curry hot over a bed of fluffy rice and enjoy!
