Sustainable Wellness For Life As a Health Coach, I am your personal advocate for living a healthy, energized, and passionate life. I became pro-active in maintaining health.

I will support your deep transformation, have what you need and desire, a lifestyle that reflects sustainable wellness for life. My journey to wellness started many years ago, 1990 to be exact. Prompted by fear, because of genetic predisposition to Cardiac Heart Failure and Diabetes Type II. Actually, my journey began at a very early age. At the age of 5, I believed that I had no value, my fears, desires, and needs were not validated. I learned to find an escape and created another version of me who learned to be in control, self-sufficient, have no needs and desires. This became my survival strategy. Growing up I believed that every time I was remotely happy, something always inadvertently awful happens. So I registered a belief that I should never be happy or I didn't have the right to have my needs or wants to be met for fear of someone getting hurt or die. I carried this into my adult life. I was beset with many deep personal conflicts. I battled depression for so many years. I perfected the self-sabotaging technique. I had countless therapists and eventually little by little transformations happened. I started acknowledging my needs and desires. I allowed myself to received support and love freely. Eventually, I acknowledge what I want in life, health, and happiness, and wanting to lead me to deep transformation. Transformation is a continual process and ultimately achieve the expression of an authentic self. Giving ourselves the liberty to shine in all areas of life allow others to do the same. By doing this, we can change the consciousness of the planet specifically how we relate to ourselves and one another. "Be the change you want to see in the world"-Gandhi

Professionally, I've worked in the medical field for about 35 years. My career has been a Clinical Laboratory Scientist working as a generalist and a Microbiologist and for a short period of time as a Medical Assistant. I've also had the opportunity to work as a liaison, interviewing and counseling battered women and abuse children at a Safe House. I also did some counseling for single women at a church I attended in California. Additionally, I'm a certified Western Herbalist, studied Ayurveda, Chinese Medicine, Aromatherapy, Shiatsu, and practicing Reiki Master. I was seeing clients and assisting them to find alternative ways to resolve physical and emotional issues. I believe the body given the right tool will heal itself. My goal as a Holistic Health Coach is to support you achieve health and happiness by creating a PERSONALIZED PROGRAM that reflects your individuality. You will be ushered into a lifestyle that will reflect your authentic self FOR LIFE, healthy, happy, successful, and secured. As a Health Coach, I am your personal advocate for living an energized and passionate life. I work with you to create happy, healthy lives in a way that is flexible, fun, and free of denial and discipline. By working together, we can discover the food and lifestyle choices that best support you. Making gradual, lifelong changes enables you to reach your current and sustainable future health goals. LETTUCE SPRING ROLL. This is my version of with tamari sauce. As I try to reduce or eliminate flour, sugar, and from my diet. I’ve been exploring ways to make healthy substitute ingredients with some of my favorite dishes. Usually the dish calls for peanut Thai sauce for dipping, with this I used Nutzo power fuel with seven seeds and nuts without peanuts. The pomegranate seeds gives it some sweet popping crunch texture, just lovely. A colorful addition to the roll.
INGREDIENTS:
, cut to bite size and baked.
Shredded organic carrots
Organic avocado, sliced

SWEET SPICY WALNUT. I enjoy a lot of type of nuts. However, walnut not as much. is great “brain” food. So I’ve discovered that soaking it for at least 20 minutes gives it more appealing taste. After a couple of hours of soaking much of the dust residue and tannins from the skin are released into the water which makes them more palatable. Added benefit of soaking are increased enzyme activity, and digestibility. So I decided to give soaking a try on walnut. It does made a lot of difference. After soaking, I baked it at low temperature 150 degrees for three hours turning nuts every hour. I also added sweet and spicy sauce and cinnamon to give it some flavor. .

SPICY VEGETABLE RAMEN BOWL. It soup time, FALL one of my favorite season of the year. I enjoy soup this time of the year and I can have it everyday if I can help it.
Ingredients:
Variety of , cut into small pieces
Medium size Red or yellow onion, sliced

My last blood test for blood sugar showed slightly elevated HA1C. Genetically I have a propensity for . My late grandmother and mother had adult onset diabetes. So for years I knew that my DNA is not a life sentence. I tried to be diligent in making sure my sugar level remain normal. However, father and mother also died with CHF ( ), inadvertently I too had to monitor my cholesterol and blood pressure. For at least 20 years I’ve been put on Lipitor (a statin drug) which I knew can induce type 2 diabetes. I wanted to get off of it but my primary care provider told me the risk for diabetes is out weighed by preventing stroke. So, now I’m determined to cut whites (white flour, sugar, rice, and processed foods). I will find ways to eat low carb and only eat ( ) and still enjoy my vegan dietary intake. It’s called , it’s not something that’s a healthy and low-calorie dish but it’s a treat to have once in a while. So, I was determined to make a healthier version. For the version, I used , organic spinach tortillas and smaller-sized organic corn tortillas. For the recipe one can find it easily on the internet, just give it your own .
Ingredients:
Tortillas, taco mix seasoning, beyond beef, salsa, guacamole, sour cream, Mexican cheese mix, diced tomatoes, chopped red onions, and chopped cilantro.

VEGAN SPICY OKRA AND ASPARAGUS: For lunch, I thought I'd make a dish using okra and asparagus. Elevating vegan recipes with flavor using varieties of spices and herbs. I know that some find veganism to be boring and hard to maintain. However, give yourself the confidence in using herbs and spices. Get to know them and make them your friends and support on your journey as a Vegan.

Ingredients:
Okra sliced into bite-size
Organic asparagus cut it into bite-size
1/2 Organic red onion, sliced thinly
3 cloves of garlic, minced
Thumb size ginger, peeled and chopped
1 organic Roma tomato, seeded and sliced
Avocado oil
Organic Tamari
Ground pepper to taste
Red pepper flakes, optional

Serve over rice.
