Healthy Recipe Idea – Mediterranean Chickpea Salad 🥗
✔ 1 can chickpeas (rinsed & drained)
✔ 1 cup cherry tomatoes (halved)
✔ 1 cucumber (diced)
✔ ¼ cup red onion (finely chopped)
✔ ¼ cup feta cheese (crumbled)
✔ 2 tbsp extra virgin olive oil
✔ 1 tbsp lemon juice
✔ Salt & pepper to taste
✔ Optional: fresh parsley or basil
Directions:
1️⃣ Combine chickpeas, tomatoes, cucumber, onion, and feta in a large bowl.
2️⃣ Whisk olive oil, lemon juice, salt, and pepper in a small bowl, then drizzle over salad.
