MEAL PREP!!!
✅Lunches ready for my busy week seeing my Fairbanks family of patients! Quinoa, arugula, carrots, tomatoes, parsley, green onions, red pepper salad.
Dressing garlic olive oil, Italian seasoning, balsamic vinegar, mustard.
🥗 Parsley is a great source of powerful anti aging polyphenols that boost collagen, prevent free radical damage, and contain vitamin K.
For protein I have some smoked salmon and air fryer Haloumi cheese. Haloumi is a 🐑 sheep’s cheese that gets nice and crispy in the air fryer. I’ll put how to make quinoa in the comments.

Hope everyone is enjoying a relaxing Labor Day! A big thank you to those who are still at work on the holiday ❤️

I wanted to share one of my new breakfast favorites! ✅👀

Mango Sticky Rice Quinoa. ☀️ More of an assembly than a recipe since I make a pot of quinoa every week. Cooked quinoa, plus full fat coconut 🥥 milk, dash of vanilla, 3-4 drops of stevia and sliced fresh or frozen 🥭 mango. It tastes like my favorite Thai dessert without any sugar other than the fruit. You could use honey 🍯 if you don’t like stevia though.
Heat up the quinoa, coconut milk, and frozen mango in the microwave in just one minute and you are ready to go! Quinoa is a high protein, high fiber, powerhouse. Mangoes are full of vitamin A, vitamin C and fiber!

Level up - I don’t know how I lived without a rice cooker because I’ve recently discovered how great they make rice (obviously) but also quinoa! And steamed veggies, and dumplings. Worth the counter space.

Mold should always be on the short list for “unexplainable” illnesses. Mold is a big issue in the interior where we build tight so moisture can build up and cause illness.
