This month, we’re spotlighting the humble sweet potato — a local November favorite packed with fiber, vitamin A, and antioxidants. Sweet potatoes support immune health, help regulate blood sugar, and are a heart-healthy addition to your fall meals.

✨ Try This: Sweet Potato & Kale Skillet Hash
A cozy, one-pan dish that’s perfect for breakfast, lunch, or dinner!
Ingredients:

2 medium sweet potatoes, diced
1 tbsp olive oil
1/2 red onion, chopped
2 cups chopped kale
1 garlic clove, minced
Salt, pepper, and smoked paprika to taste
Optional: top with a fried egg or sprinkle of feta

Instructions:
