密西根前賢分享一道簡易的「電鍋菇菇燉飯」:

1. 白米2 杯,藜麥1 杯洗淨,加4 杯水備用。
2. 兩種新鮮蘑菇,例如秀珍菇或鴻囍菇,也可用乾香菇泡軟。一杯菇切丁,用2 匙油炒香,加點鹽巴和糊椒粉。
3. 一缶椰子奶(coconut milk)
4. 一杯冷凍毛豆或青豆。

將1、2、3、4 一起放入電鍋內鍋,稍拌一拌,電鍋外鍋加入二杯水。壓下開關,45分鐘後,-鍋香噴噴營養的菇菇燉飯就完成了。

A good way to enjoy Tacos with peace of mind 😊
Eating food that loves us back.

Jackfruit Tacos with Lime Crema
🌱🌱🌱
Ingredients:
Tacos meat
1 can young jackfruit (native forest brand)
1-2 stalk celery,diced
1 tsp grated ginger
Salt
Spice:
1 tsp chili powder
1 tsp cumin salt
1 tsp smoked paprika
1 tsp chipotle pepper or cayenne pepper
1/4 c crushed tomato
1 tbsp lime juice
1/2 tbsp maple syrup

Lime crema:
1/2 c. soaked cashew
1 inch ginger
1/4 c. Cilantro
1 fresh lime juice ( 2 tbs)
Sea salt
*blend all ingredients until smooth

How to make:
1. Sauté celery with ginger little salt in a pan until celery is cooked
2. Add shredded jackfruit and mix in with celery.
3. Add spices, chili powder, cumin, smoked paprika, chipotle pepper powder or cayenne pepper and mix well and add a little bit of salt
4. Add about 1/2 cup crushed tomatoes mix well and simmer for a few mins-if it to dry add some water
5. Finish with 1 tbs of fresh lime juice
6. To balance the test add 1 tbs maple syrup.

Assemble: add tacos meat on tacos bread topping with a slice avocado cilantro purple cabbage and lime crema squeeze lime juice and enjoy 😊

May we start our day with a healthy breakfast that not only healthy for body but also for mind and spirit...

Super Smoothie Bowl🍓🥑🍌🥝

1 8 oz bag mix berries
2 bananas
1/2 avocado
2 dates
2 tbsp soaked chia seeds
1/3 cup oat milk
1 tbsp seamoss gel (optional)

Blend all ingredients in a blender until smooth, pour in a bowl and top with your favorite fruits and Granola.

Happy Monday everyone!!

Here is a healthy eating challenge!

Challenge: We challenge everyone to consume 24g or less of added sugar for women / 36g or less of added sugar for men, based on AHA (American Heart Association) guidelines for 7 days (and note how you feel on day 7).

Further Reading: Here’s a quick Harvard University article for anyone who wants to read more about these guidelines and learn about added sugar. Even “healthy” sugars like agave count as added sugars, while naturally occurring sugars, such as those found in a peach are not added sugars, as they are naturally occurring (and less harmful).
