🍂✨ Sheet-Pan Salmon with Roasted Fall Veggies ✨🍂
An easy, wholesome dinner that’s packed with flavor and perfect for cozy nights in. 🐟🥦 Save this for later so you can try it yourself!
Serves 4
Ingredients
2 tbsp low-sodium soy sauce
1 tbsp sesame oil
1 tbsp maple syrup (or honey)
1 tbsp fresh lime juice
¼ tsp red pepper flakes
1 clove garlic, minced + 3 whole cloves, smashed
2 tbsp freshly grated ginger
4 (5-oz) salmon fillets, skin-on
1 small butternut squash, peeled & cubed (~2 lbs)
1 lb Brussels sprouts, trimmed & halved
1 tbsp olive oil
¼ tsp ground black pepper
1 tsp sesame seeds (garnish)
Directions
1️⃣ Preheat oven to 425°F. Mix soy sauce, sesame oil, maple syrup, lime juice, red pepper flakes, minced garlic & ginger. Marinate salmon, skin-side up.
2️⃣ On a baking sheet, toss squash & Brussels sprouts with olive oil and pepper. Add smashed garlic cloves. Roast 15 mins.
3️⃣ Stir veggies, then make room for salmon. Place fillets skin-side down, pour marinade on top. Roast 12 more mins, until salmon flakes with a fork.
4️⃣ Garnish with sesame seeds & serve!
💡 Swap butternut squash for sweet potatoes, or try with asparagus or green beans for quicker cooking.
