Shrimp Tacos with a cilantro lime dressing for dinner tonight! šŸ˜‹

CILANTRO LIME SAUCE
1 lime (3 tbsps juice + 1/2 tsp zest)
1-2 cloves garlic, minced
1/2 of a large bunch of cilantro
1/2 jalapeƱo (1 full jalapeƱo for a spicy dressing)
1/2 cup mayonnaise
1/2 cup sour cream
Blend in blender or food processor.

SHRIMP
1 pound medium shrimp, peeled & deveined
2 small cloves garlic, minced
1/2 tsp salt
1 tsp ground cumin
1 tsp chili powder
1/2 tsp onion powder
3 tbsp olive oil
Marinate for 15 minutes up to overnight.

Fry shrimp in 1 tbsp butter and 1 tbsp olive oil.

TOPPINGS
1-2 fresh limes
2 cups shredded green/purple cabbage (mixed with 1/2 cup of cilantro dressing)
1 large avocado
Corn (or flour) tortillas

Low carb sausage and peppers for dinner tonight!

Butterfly some Italian sausage. I also remove the casing. Cook and sear on both sides. Sautee some peppers and onions with garlic powder, salt, pepper, and a few glugs of balsamic vinegar to caramelize the veggies. Put the veggies on top of the sausage followed by cheese. Then pop in the oven until the cheese is melted! I think next time I may try some spicy sausage, too. And maybe even some jalapeƱos on top.
