Dearest FB Community, on April 2nd, 2016, I will be temporarily closing my acupuncture practice so that I can nurture my little family. I am not sure when I will reopen, but when I do, I will shout it from the (cyber) roof tops! You can be sure of that. Until then, be well.

Lucky rats got their zen-on!! How did I miss this?! Electro-Acupuncture on rats was shown to block elevated stress hormones produced via the hypothalamus-pituitary-adrenal axis AND block sympathetic nervous system pathway of neuropeptide Y (NPY)! ( Just an FYI: NPY is implicated in increased appetite, increased fat storage, and anxiety, among other things.)

While acupuncture is used widely to treat chronic stress, the mechanism of action leading to reported health benefits are not understood. In a series of studies, researchers are demonstrating how acupuncture can significantly reduce the stress hormone response in an animal model of chronic stress.

Super Simple Scrumptious Breakfast

Half or a whole bunch of kale or chard or any dark green leafy you have about
1-2 farm-fresh, pastured eggs
Sea salt and freshly ground pepper
1-2 tsp coconut oil
1 tsp butter

(1) Saute the dark greens in 1-2 tsp coconut oil, add salt and pepper to taste
(2) Fry your eggs in 1 tsp of butter
(3) Put greens on plate, put eggs on the greens
(4) Enjoy the yumminess AND the sustained energy all morning!

My new favorite thing: BONE BROTH!!! This mineral-rich soup is great for reducing inflammation, healing a leaky gut, and promoting relaxation, among many other benefits. Here is currently my favorite recipe from Diane Sanfilippo's "Practical Paleo" cookbook. Make a batch today, sip a cup tomorrow and feel in your belly the warm glow of goodness!! (Be sure to use only the highest quality bones from pastured, 100% grass-fed beef and/or pastured poultry!!)

Mineral-Rich Bone Broth/Stock

4 quarts filtered water
1 1/2 - 2 lbs of bones (beef knuckle bones, marrow bones, meaty bones, chicken or turkey necks, chicken or turkey carcass bones, or any bones you have around)
2 tablespoons apple cider vinegar (organic, unfiltered such as Bragg's brand)
2 teaspoons (or to taste) unrefined sea salt (optional)
Cloves from 1 whole head of fresh garlic, peeled and smashed (optional)

1. Place all ingredients in a 6-quart slow-cooker and set heat to high. Bring to a boil. Once boiling, reduce heat to low and allow to cook for a minimum of 8 hours and up to 24 hours. The longer it cooks, the better! If you do not have a slow-cooker, you can use a pot on the stove. After boiling, set the pot to the lowest flame/setting possible that allows a tiny bubble.

2. After cooking, turn off cooker/pot and allow to cool. Strain through a fine mesh metal strainer or cheese cloth (I did not do this part and it was just fine by me to have bits of meat in my stock/broth!). Place cooled stock/broth in glass jars for the fridge or freezer for later use.

3. Drink as a soup or use as a base in soups, stews, or anything that calls for soup stock!
