Tex-Mex Stuffed Sweet Potatoes

Servings: 2
Ingredients:
* 2 medium sweet potatoes
* 8 oz lean ground turkey
* 2 cups fresh spinach
* ½ cup black beans (rinsed)
* ¼ cup diced onion
* 2 cloves garlic (minced)
* 1 tsp olive oil
Seasoning:
* 1 tsp chili powder
* ½ tsp cumin
* ½ tsp smoked paprika
* Salt + pepper
Toppings (optional but worth it):
* Avocado
* Salsa
* Dairy-free plain yogurt
* Fresh cilantro
❤️Directions
1. Bake sweet potatoes
400°F for 40–50 min (until soft)
2. Cook filling
Sauté onion + garlic in olive oil
Add turkey → cook through
Stir in spices
Add black beans + spinach → cook until wilted
3. Assemble
Slice potatoes open, mash slightly
Fill with turkey mixture
Add toppings
