It's National Cookie Day! Sweeten your day and forget the standard cookie recipe. Try our very own Care Coordinator, Ashleyโs, family recipe for delicious chocolate chip cookies. They're made with love and seriously delicious!
Serving size: 26 cookies
Ingredients:
1 cup unsalted butter, softened
1/2 cup granulated sugar
1 cup light brown sugar, tightly packed
2 large eggs, room temperature
2 tablespoons vanilla extract
3 cups all purpose flower
1 teaspoon baking soda, sifted
1 teaspoon salt
2 cups milk chocolate chips
Directions:
1. Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper. In the bowl of a stand mixer with a paddle attachment, combine 2 sticks of butter, 1 cup of packed brown sugar, and 1/2 cup of white sugar. Beat for five minutes on medium or high speed until creamy and light, scraping the bowl as needed.
2. Add 2 large eggs, one at a time, beating well with each addition, scraping bowl as needed, then beat in two tablespoon of vanilla.
3. In a separate bowl, combine 3 cups of flour, 1 teaspoon of salt, and 1 teaspoon baking soda (sifted to eliminate lumps). Add the flour mixture to the creamed butter in thirds, mixing to incorporate each addition. Fold in 2 cups of chocolate chips.
4. Use an ice cream scoop to get even balls of dough that are 3 teaspoon each. Roll dough balls lightly with your hands. Place scoops of dough onto a lined baking sheet about 2 inches apart. With these instructions, 26 cookies should fit into 3 baking sheets. Optional step is to top cookies balls with chocolate chips. Bake after placed on sheet or freeze balls of dough until ready to bake.
5. Bake one cookie sheet at a time for 12-15 minutes at 350 degrees Fahrenheit until edges are just turning golden. The top of the cookie should still look underbaked slightly. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a cooling rack.
