Happy September! If you’ve ever scrolled through fitness forums, social media, or talked to someone at the gym, you’ve probably encountered the debate: should you work out on an empty stomach (fasted) or after eating (fed)? Some argue that fasted workouts enhance fat burning and metabolic health. Others claim that eating beforehand helps you train harder, recover faster, and build muscle more effectively. So, who’s right? Read our September blog to learn what the research says about fasted versus fed workouts and, more importantly, how to choose what works best for you.

Happy August! Our food feature this month is eggplant. Originating in South Asia and Africa, eggplant has fought a long battle for its positive reputation as it was once considered poisonous and the cause of a few diseases. Today, it's grown all over the world and considered a delicious staple in a wide variety of cuisines. June ushers in a magical shift in the season where farmer’s markets come alive, and grocery stores become filled with bright, seasonal produce. Nestled between familiar produce favorites, a less familiar, frond-topped vegetable begins to pop-up. This veggie is fennel— a crunchy, slightly sweet, and anise flavored gem. Have you been curious about fennel, but skipped it due to not knowing what in the world to do with it? Read our June blog to learn all about fennel and how to use this veggie!

Did you know that asparagus was such a prominent vegetable in ancient Rome that their society even coined a slang phrase about it? This was “Velocius Quam asparagi conquantur,” which translates to “faster than cooking asparagus.” Think you can read our blog faster than the time it takes to cook asparagus? How long does that even take? To find out, read all about asparagus in our May blog!

Meet the KRNC's April student spotlight: Max Rafferty

Max is from South Berwick, Maine, and is currently a Junior pursuing his Bachelor's degree in Food Science and Human Nutrition. He is interested in learning more about how dietitians are part of the care team treating eating disorders, and his future career plans include working in eating disorder recovery.

Max remarks, "My favorite parts about working at the KRNC are number one shadowing, I feel I have gained so much knowledge from just seeing how sessions are run, specifically I think it has been very useful to see all of the different dietitians interviewing styles and all the different types of clients. Number two, the debriefing sessions have been very helpful to get an idea of the type of dietitian I want to be."
