It’s been a hectic month making adjustments to take on a new role in my Army career, but wanted to share the video from this week with all my family and friends. I have officially taken command of the medical company for Ireland Army Health Clinic. Let’s be the light in the darkness when misinformation runs rampant 🤦‍♀️

This is one of the most ridiculous things I’ve read in a while! Off the wall, totally crazy🤪, and enraging.

I’m not denying there aren’t both good and bad dietitians out there, but how about we put the blame on the misinformation that’s out there. It truly is challenging cutting through the crap, but let’s NOT blame my entire profession, while we have nutrition quacks, influencers, and know it alls spreading nonsense. Let’s be real…life is hard, but let’s at least take responsibility for our actions or lack of action. My opinion is personal responsibility is lacking and everyone wants to blame someone or something. How about lack of activity, what about adequate sleep, and increased stress. Can we stop the blame game on dietitians and take a more collaborative approach!?! After-all, theres no “I” in team. Teamwork makes the dream work!

It’s been an interesting journey the last two years, but at the same time I can’t believe it has been 2 years! Being a Dietitian in the Army has proven eventful and I’ve been afforded the opportunity to do things that I never would have done otherwise. I’ve taken the good with the bad, but one thing that has stayed consistent is I have met A LOT of amazing people along the way! Thank you to everyone for all the great memories! Throwback to some of my healthy plates while I was at JBSA for training. So often I hear the excuse that you can’t eat healthy in the DFAC/Warrior Restaurants. Sometimes the choices can get old after rotating through the menu, but you can eat healthy. Lean protein, whole grain carbohydrates, variety of vegetables/fruits. Or follow the go for green labels to assist you in making best choices! Keep it simple! How do you plan your performance plate?

Just in case you were wondering…YES I do go out to eat from time to time. is one of my fave places to go for salmon! Every time we PCS I have to find a new place for seafood. Taziki’s is the best! I like the grilled salmon feast, potatoes, and the Mediterranean salad! We of course get pita and hummus too! 😋

I love simple and delicious recipes! Stir fry is easy and the combinations are endless. Last night’s combo was onions, peppers, carrots, mushrooms, baby corn, bamboo shoots, and broccoli. You could also use sugar snap peas, green peas, cabbage, or anything else to add color, flavor, and texture. I will be honest I didn’t follow a recipe, I just eyeballed the ingredients and tossed in about 2-3 diced chicken breasts. Oh and don’t forget to add garlic and fresh ginger 😋 For the stir fry sauce I used 1/4 cup chicken broth, 2 Tbl soy sauce, 2 Tbl honey, and 1/2 tsp cornstarch to thicken. I decided on brown rice tonight, but there are lots more options, be creative. Variety is key!
