Warm up your week with Pumpkin Turkey Chili—a cozy, protein-packed meal that’s full of fall flavor and diabetes-friendly benefits 🍁
What you’ll need:
● 1 tablespoon vegetable oil
● 1 cup chopped onion
● ½ cup chopped green bell pepper
● ½ cup chopped yellow bell pepper
● 1 clove garlic, minced
● 1 pound ground turkey
● 1 (14.5 ounce) can diced tomatoes
● 2 cups pumpkin puree
● 1 ½ tablespoons chili powder (or more to taste)
● ½ teaspoon ground black pepper
● 1 dash salt
● ½ cup shredded Cheddar cheese
● ½ cup sour cream
Let’s make it:
1. Heat 1 tablespoon vegetable oil in a large skillet over medium heat.
2. Add 1 cup chopped onion, ½ cup chopped green bell pepper, ½ cup chopped yellow bell pepper, and 1 clove minced garlic. Cook and stir until tender, about 5 minutes.
3. Stir in 1 pound ground turkey and cook until evenly browned. Drain excess fat if needed.
4. Mix in 1 (14.5 ounce) can of diced tomatoes and 2 cups pumpkin puree.
5. Season with 1½ tablespoons chili powder, ½ teaspoon ground black pepper, and a dash of salt. Stir well to combine.
6. Reduce heat to low, cover, and let simmer for 15 to 20 minutes to allow the flavors to blend.
7. Serve hot, topped with ½ cup shredded Cheddar cheese and ½ cup sour cream.
