Warm up your week with Pumpkin Turkey Chili—a cozy, protein-packed meal that’s full of fall flavor and diabetes-friendly benefits 🍁

What you’ll need:
● 1 tablespoon vegetable oil
● 1 cup chopped onion
● ½ cup chopped green bell pepper
● ½ cup chopped yellow bell pepper
● 1 clove garlic, minced
● 1 pound ground turkey
● 1 (14.5 ounce) can diced tomatoes
● 2 cups pumpkin puree
● 1 ½ tablespoons chili powder (or more to taste)
● ½ teaspoon ground black pepper
● 1 dash salt
● ½ cup shredded Cheddar cheese
● ½ cup sour cream

Let’s make it:
1. Heat 1 tablespoon vegetable oil in a large skillet over medium heat.
2. Add 1 cup chopped onion, ½ cup chopped green bell pepper, ½ cup chopped yellow bell pepper, and 1 clove minced garlic. Cook and stir until tender, about 5 minutes.
3. Stir in 1 pound ground turkey and cook until evenly browned. Drain excess fat if needed.
4. Mix in 1 (14.5 ounce) can of diced tomatoes and 2 cups pumpkin puree.
5. Season with 1½ tablespoons chili powder, ½ teaspoon ground black pepper, and a dash of salt. Stir well to combine.
6. Reduce heat to low, cover, and let simmer for 15 to 20 minutes to allow the flavors to blend.
7. Serve hot, topped with ½ cup shredded Cheddar cheese and ½ cup sour cream.

Apple Pie Yogurt Parfait brings fall flavor to your breakfast—layered with protein, fiber, and blood sugar-friendly ingredients.

This diabetes-friendly parfait is easy to prep, delicious to eat, and supports a steady morning routine.

Grab these ingredients:
• 2 tbsp canola oil
• 2 tsp stevia brown sugar blend (e.g., Truvia)
• 2 tbsp sunflower or almond butter
• Nonstick cooking spray
• 1/4 cup quick-cooking oats
• 1/4 cup chopped walnuts
• 1/4 cup shelled sunflower seeds
• 1 1/2 tbsp whole flax seeds
• 1/3 cup water
• 2 tsp lemon juice
• 1 tsp vanilla extract
• 1 tsp ground cinnamon
• 1/8 tsp ground nutmeg
• 2 medium apples (peeled, cored, and diced)
• 2 tsp unsalted butter
• 2 cups plain nonfat Greek yogurt
• Zest of 1 lemon (about 1 tbsp)

How to make it:
1. Line a baking sheet with aluminum foil or parchment paper.
2. In a small bowl, whisk together 2 tablespoons canola oil, 2 teaspoons stevia brown sugar blend (such as Truvia), and 2 tablespoons sunflower or almond butter until smooth. Set aside.
3. Coat a medium saucepan with nonstick cooking spray and heat over medium-low heat. Add 1/4 cup quick-cooking oats, 1/4 cup chopped walnuts, 1/4 cup shelled sunflower seeds, and 1 1/2 tablespoons whole flax seeds. Toast until slightly brown and fragrant, stirring regularly, about 5 minutes. Remove the toasted oat mixture from the saucepan and place in a small bowl.
4. Add the oil mixture into the saucepan and bring to a boil. Then quickly turn the heat to low and whisk regularly, until the mixture has slightly thickened, about 1 minute. Remove the saucepan from the heat and add the toasted oat mixture. Stir to evenly coat.
5. Spread the oat mixture in a single layer on the prepared baking sheet and allow to cool for 10 minutes. Wipe the saucepan clean with a paper towel.
6. In a medium bowl, whisk together 1/3 cup water, 2 teaspoons lemon juice, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, and 1/8 teaspoon ground nutmeg. Add 2 medium apples (peeled, cored, and diced) and toss to evenly coat.
7. In the same saucepan, heat 2 teaspoons unsalted butter over medium heat. Once melted, add the apple mixture and cook until the apples have slightly softened, about 5 minutes. Set aside to cool slightly.
8. While the apples are cooking, mix 2 cups plain nonfat Greek yogurt and 1 tablespoon lemon zest in a small bowl.
9. In each of 4 parfait glasses, layer 1/4 cup of the yogurt, 1/3 cup of the apple mixture, another 1/4 cup of yogurt, and top with 1/4 cup of the granola.

Spinach Yogurt Dip is the perfect light and satisfying snack—great for blood sugar balance and your taste buds!
