Crunchy Pasta Salad might be challenging for those with a sensitive stomach so skip raw onion and garlic ( use powdered,dry instead) and chew it very very slowly to create saliva. Great for hosting guests ones in a while- not the healthiest for everyday meal option.
Ingredients
• Short pasta (Rigatoni, Penne, or Farfalle)
• Iceberg lettuce or Romaine lettuce
• Cherry tomatoes
• Red onion
• Fresh herbs (parsley or basil)
• Olive oil
• Salt
• Black pepper
Yogurt Dressing
• Plain vegan yogurt
• Sour cream plant based
• Mustard
• Lemon juice or pickle juice
• Salt
• Black pepper
• Garlic powder
Instructions
1. Cook the pasta in plenty of salted water until al dente (about 8–10 minutes).
2. Drain the pasta and let it steam dry well.
3. Mix the pasta with olive oil, salt, and pepper.
4. Place the pasta in the air fryer at 200°C / 400°F and cook until golden and crispy (15–18 minutes). Shake once during cooking.
5. Wash and dry the lettuce, then roughly chop it.
6. Cut the cherry tomatoes in half.
7. Finely slice the red onion.
8. Roughly chop the fresh herbs.
9. Add lettuce, tomatoes, onion, and herbs to a large bowl.
10. In a small bowl, mix yogurt, sour cream, mustard, lemon juice, salt, pepper, and garlic powder until smooth.
11. Pour the dressing over the salad.
12. Add the crunchy pasta on top.
13. Gently toss everything together and serve.
Crispy pasta like chips, fresh salad underneath, and creamy dressing.
