These baked protein oats are packed with protein and are my go to breakfast, every single day. I meal prep some version of these oats every week. I always eat them with Greek yogurt, for even more protein and top them with fresh or frozen berries. 🍋 Lemon Poppy Baked Protein Oats 🍋
1 1/2 cups Sprouted Whole Grain Oats
2 scoops Vanilla Protein Powder
1 pinch of Redmond Real Salt
1 tbsp Poppy Seeds
1 tbsp Baking Powder
1/2 pkg No Sugar Added Lemon Jello Pudding
Mix or 3 tbsp Lemon Extract
1/4 cup Plant Milk
3-4 droppers Vanilla Liquid Stevia
1 tbsp Almond Extract
1 1/2 cups Riced Cauliflower (frozen)
1 cup Liquid Egg Whites
Preheat oven to 350 degrees. Combine all of your dry ingredients into a square brownie pan and mix well. Because of the amount of moisture in the recipe I never need to grease my pan. Add wet ingredients to dry ingredients and mix well. Add cauliflower rice and break up any chunks while you mix it. After all of the ingredients are mixed well, add the liquid egg whites and stir thoroughly. Bake for 35 minutes. Let it cool completely before you eat it. You don’t taste the cauliflower, it’s there for volume, but these oats definitely taste better the longer it’s allowed to set and cool out of the oven. Eat up!
