Recipe reimagined!
Weekend baking win!
I gave my Pumpkin Chocolate Chip Muffins a whole-food makeover — and they were a hit with friends!
Ingredients:
Pumpkin Chocolate Chip Muffins (Whole-Food Version)
•4 eggs
•1 cup unsweetened applesauce
•½ cup mild oil (olive, avocado, or coconut)
•½–¾ cup honey
•1 (16 oz) can pure pumpkin (or ~2 cups cooked pumpkin/squash puree)
•1½ cups whole wheat flour (white whole wheat for lighter texture)
•1½ cups oat flour (or finely ground rolled oats)
•2 tsp baking soda
•2 tsp baking powder
•1 tsp cinnamon (or pumpkin pie spice)
•1 tsp salt
•1½–2 cups dark chocolate chips (60%+ cacao)
Instructions:
1️⃣ Preheat oven to 400°F. Line or grease muffin tins.
2️⃣ Whisk eggs, applesauce, oil, honey & pumpkin until smooth.
3️⃣ In another bowl, mix dry ingredients.
4️⃣ Combine wet + dry gently, then fold in chocolate.
5️⃣ Fill muffin cups ⅔ full.
6️⃣ Bake 16–20 min (toothpick should come out clean).
Yields ~24 muffins
