Celebrate St. Patrick's Day by eating something green (and healthful) like broccoli or spinach!
Spinach Salad
INGREDIENTS
Red Wine Vinaigrette
• 1/2 cup extra virgin olive oil
• 1/4 cup red wine vinegar
• 2 garlic cloves, crushed
• 1/4 teaspoon salt
• 1/4 teaspoon pepper
• 1/4 teaspoon dry mustard
• 1/4 teaspoon onion powder
Salad
• 1 cup walnuts
• 1-pound baby spinach leaves, trimmed
• 1 bunch green onions, chopped
• 1/2 cup dried cherries or 1 cup fresh berries
• 1/4 cup chopped fresh dill w**d
• 1/4 cup goat cheese
