Both meat-eaters and vegans will love this Cauliflower Lentil Taco recipe! 🌮 Whether you prefer gluten-free, corn, or alternative tortillas, or (our favorite) a refreshing salad base, this mix will hit the spot!

Here’s what you’ll need:

1/2 medium white onion
1 bag frozen cauliflower rice
2 cups cooked green lentils
1 cup salsa
1 tbsp tomato paste
1 tsp garlic powder
1 tsp salt
1 tsp smoked paprika
1 tsp ground cumin
1.5 tbsp coconut aminos

Instructions:

Preheat a cast iron or stainless steel skillet over medium heat. Lightly coat with olive or avocado oil.
Add the onions and sauté for 2-3 minutes.
Stir in the frozen cauliflower rice and cook for another 3-4 minutes.
Add the rest of the ingredients and stir well. Let everything cook together for 8-10 minutes.

Craving a fun way to get your veggies in? Try these Smashed Brussels Sprouts! 💚💚

Ingredients:

1 lb brussels sprouts, ends cut off
1 tbsp olive oil
3/4 tsp sea salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp smoked paprika
1 tsp nutritional yeast (optional)
Instructions:

Preheat oven to 425°F and line a large baking sheet with parchment paper.
Place brussels sprouts on the baking sheet. Use a flat glass to gently smash each one until flattened (you can soften them first by microwaving or boiling).
Mix the seasonings in a small bowl. Drizzle the sprouts with olive oil and sprinkle the seasoning mix on top.
Roast for 15-18 minutes, until golden and crispy. 👩‍🍳
Serve hot and enjoy this delicious, nutrient-packed treat!
