If you missed the yummy snack suggestion in my Walking Challenge yesterday, here you go - Hummus Stuffed Egg Whites! So easy to do, and filled with energy-fueling protein and fiber. Try them today!
2 hard-boiled eggs
3 Tbsp. White Bean Hummus
White Bean Hummus
2 (15 oz.) cans cannellini beans (choose no-salt-added or low-sodium beans and rinse and drain well before use)
3 Tbsp. olive oil
2 Tbsp. lemon juice (plus zest of 1 lemon, if desired)
2 Tbsp. water
1/2 tsp. black pepper
1/4 tsp. salt (only use if beans have no added salt)
2 tsp. ground cumin
2 to 3 cloves garlic (saute the garlic for about 1 minute in the olive oil for a milder garlic flavor)
1. Add all of the ingredients to the base of a food processer. Process until smooth.
Makes 16 servings (serving size = 2 Tbsp.)
(Yield is 2 cups hummus)
1. Slice the eggs in half lengthwise. Discard the yolks.
2. Spoon the hummus into the centers of the egg whites.
