🌮 Taco Tuesday Delight! 🌮

Who says you can't enjoy tacos while staying on track with your healthy eating goals? Here's a delicious and nutritious taco recipe that's perfect for your Tuesday dinner! 🍴😋

Taco Filling:

100g lean ground turkey or chicken
1/4 cup diced tomatoes 🍅
1/4 cup diced onion 🧅
1/4 cup diced bell peppers 🌶️
1 clove garlic, minced 🧄
1/2 tsp chili powder 🌶️
1/4 tsp cumin
Salt and pepper to taste 🧂
Lettuce Wraps (Taco Shells):

Large iceberg lettuce leaves 🥬
Instructions:

In a non-stick skillet over medium heat, cook the lean ground turkey or chicken until it's no longer pink and cooked through. Break it up into small pieces with a spatula as it cooks.
Add diced tomatoes, onions, bell peppers, and minced garlic to the skillet. Continue to cook until the vegetables are tender.

Season the mixture with chili powder, cumin, salt, and pepper. Stir well to combine and let it cook for a few more minutes.

Carefully separate large iceberg lettuce leaves to use as taco shells.
Spoon the taco filling into the lettuce leaves, creating your own mini taco wraps.

Customize with your favorite toppings such as salsa or a squeeze of fresh lime juice.

Taco Salad Tuesday! 🤤

Taco Salad with Beef

Ingredients:

100g lean ground beef
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon paprika
1/4 teaspoon garlic powder
Salt and pepper to taste
1 cup shredded lettuce
1/4 cup diced tomatoes
1/4 cup diced red onion
2 tablespoons diced bell pepper (any color)
2 tablespoons salsa (sugar-free)
1 tablespoon apple cider vinegar
Fresh cilantro, chopped (for garnish)
Instructions:

In a skillet, cook the lean ground beef over medium heat until fully cooked. Break it into small pieces as it cooks.
Season the cooked beef with chili powder, cumin, paprika, garlic powder, salt, and pepper. Mix well.
