Taco Filling:

100g lean ground turkey or chicken
1/4 cup diced tomatoes ๐Ÿ…
1/4 cup diced onion ๐Ÿง…
1/4 cup diced bell peppers ๐ŸŒถ๏ธ
1 clove garlic, minced ๐Ÿง„
1/2 tsp chili powder ๐ŸŒถ๏ธ
1/4 tsp cumin
Salt and pepper to taste ๐Ÿง‚
Lettuce Wraps (Taco Shells):

Large iceberg lettuce leaves ๐Ÿฅฌ
Instructions:

In a non-stick skillet over medium heat, cook the lean ground turkey or chicken until it's no longer pink and cooked through. Break it up into small pieces with a spatula as it cooks.

Taco Salad with Beef

Ingredients:

100g lean ground beef
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon paprika
1/4 teaspoon garlic powder
Salt and pepper to taste
1 cup shredded lettuce
1/4 cup diced tomatoes
1/4 cup diced red onion
2 tablespoons diced bell pepper (any color)
2 tablespoons salsa (sugar-free)
1 tablespoon apple cider vinegar
Fresh cilantro, chopped (for garnish)
Instructions:

Chicken, Apples and Kale

Ingredients



4 oz Chicken Breast

Pam Cooking Spray

1 medium apple, diced

2 cups Kale, washed and shredded

2 cloves fresh garlic, minced

Juice of 1/2 lemon

1 tbs Braggs Liquid Aminos

Salt and fresh ground black pepper to taste (Himalayan Pink Salt recommended)



Directions



1) Season chicken breast with salt and pepper and grill (or pan fry) with Pam spray.

2) Coat a medium sized pot with Pam Cooking Spray and cook minced garlic over medium-high heat, until softened.
3) Mix in the apples and stir often for a 2-3 minutes.

4) Add kale, lemon juice, and Bragg's liquid aminos to the pan and cook for a few minutes until kale is slightly wilted.

5) Plate chicken and kale mixture together and salt and pepper to taste.
