Cottage Cheese Egg Bites 🧀🥚
(One of my favorites!! 💜 )

Ingredients:
- 4 large eggs 🥚
- ½ cup cottage cheese 🧀
- ¼ cup shredded cheddar cheese (or cheese of choice) 🧀
- ¼ cup diced bell peppers 🌶️
- ¼ cup chopped spinach 🌿
- ¼ teaspoon salt 🧂
- ¼ teaspoon black pepper 🌿
- ¼ teaspoon garlic powder 🧄

Instructions:
- Preheat Oven: Set oven to 350°F (175°C). Lightly grease a muffin tin. 🔥
- Blend Eggs & Cottage Cheese: In a blender, mix eggs and cottage cheese until smooth and frothy. 🥚🧀
- Add Ingredients: Pour the mixture into a bowl and stir in cheese, bell peppers, spinach, salt, pepper, and garlic powder. 🌿🧄
- Fill Muffin Tin: Divide mixture evenly among muffin cups, filling each about ¾ full. 🥣
- Bake: Bake for 20-25 minutes, or until set and lightly golden on top. ⏳
- Cool & Serve: Let cool slightly before removing. Enjoy warm or store for later! 😋

Tips & Variations:
- Meal Prep Friendly: Store in an airtight container in the fridge for up to 4 days. Reheat in the microwave! ❄️
- Freezer Option: Freeze and thaw overnight in the fridge before reheating. 🥶
- Dairy-Free: Swap cottage cheese for dairy-free yogurt or blended silken tofu. 🥛
- More Protein: Add chicken, turkey, or extra cheese for a protein boost! 🍗🧀
