🍂 Pumpkin Bread Bliss 🍫

Pumpkin season is here — and this cozy, chocolatey loaf is everything you need on a crisp fall morning. Moist, high in fiber, and packed with nutrients, this Pumpkin Chocolate Chip Bread is a guilt-free treat that tastes like autumn in every bite. 🍁

Why we love pumpkin:
Rich in vitamin A, antioxidants, and fiber, pumpkin supports immune health, glowing skin, and steady energy — making it a seasonal favorite with serious benefits.

Recipe:
• 1 ½ cups oat or whole wheat flour
• 1 tsp baking soda
• 1 tsp cinnamon
• ½ tsp nutmeg
• ½ tsp salt
• 1 cup pumpkin purée
• 2 eggs
• ¼ cup maple syrup or honey
• 2 Tbsp melted coconut oil
• 1 Tbsp ground flaxseed
• 1 Tbsp chia seeds
• ⅓ cup dark chocolate chips

Directions:
1. Preheat oven to 350°F (175°C).
2. Mix dry ingredients; whisk wet ingredients separately.
3. Combine, fold in chocolate chips, and pour into a greased loaf pan.
4. Bake 45–50 min or until a toothpick comes out clean.

Slice, savor, and enjoy that fall flavor — body and soul approved. 🤎🍞

Cottage Cheese Egg Bites 🧀🥚
(One of my favorites!! 💜 )

Ingredients:
- 4 large eggs 🥚
- ½ cup cottage cheese 🧀
- ¼ cup shredded cheddar cheese (or cheese of choice) 🧀
- ¼ cup diced bell peppers 🌶️
- ¼ cup chopped spinach 🌿
- ¼ teaspoon salt 🧂
- ¼ teaspoon black pepper 🌿
- ¼ teaspoon garlic powder 🧄

Instructions:
- Preheat Oven: Set oven to 350°F (175°C). Lightly grease a muffin tin. 🔥
- Blend Eggs & Cottage Cheese: In a blender, mix eggs and cottage cheese until smooth and frothy. 🥚🧀
- Add Ingredients: Pour the mixture into a bowl and stir in cheese, bell peppers, spinach, salt, pepper, and garlic powder. 🌿🧄
- Fill Muffin Tin: Divide mixture evenly among muffin cups, filling each about ¾ full. 🥣
- Bake: Bake for 20-25 minutes, or until set and lightly golden on top. ⏳
- Cool & Serve: Let cool slightly before removing. Enjoy warm or store for later! 😋

- Meal Prep Friendly: Store in an airtight container in the fridge for up to 4 days. Reheat in the microwave! ❄️

When you make snacks ready to grab and go, you’re more likely to grab it to eat. Think about the things that are easy to grab and go… typically it’s cookies, cakes, chip bags, and unhealthy “treats”. If your intentions are to eat healthier, be intentional about your snack options! Have fruit washed and ready, nuts and seeds packaged for grabbing, cheese sticks handy in the fridge!
