Comforting whole food dinners made simple! Introducing my Mexican Sweet Potatoes that can be made on the busiest of nights! Add them to your meal plan this week and give them a go! Enjoy! 🍠

Ingredients:
4 medium sweet potatoes
1 15. oz. can of organic black beans (drained)
1 15. oz. can of organic corn kernels (drained)
1 cup of organic diced tomatoes
1 large rip avocado
4 jalapenos (optional)
1/2 tsp of pink Himalayan salt
1/2 tsp of ground cumin
1/2 tsp of garlic powder
1/2 tsp of chili seasoning
Directions:

Preheat your oven to 400 degrees and then bake your sweet potatoes for thirty minutes or until softened. Then in a medium sauce pan cook the black beans, corn and salt, cumin, garlic and chili seasoning together on medium heat for twenty minutes. Then turn off the heat, put on a lid and allow the seasonings to simmer. Lastly, dice your tomatoes, avocado, and jalapenos (if desired). Remove the sweet potatoes from the oven and allow them to cool for a five to ten minutes, dice them in half and then assemble the toppings (in no particular order) and then enjoy!

If you ask me, "breakfast of the champions" should really be whole food based and loaded with all the goods: protein, fiber and antioxidants! Those nutrients really do a great job keeping the body energized and feeling good! My Superfood Muesli is simple to make and it truly embodies all of the above so needless to say, it's on rotation here at our house! Give it a try!

Ingredients:

1 cup of quick organic oats
1/4 cup of blueberries and raspberries
1/4 cup of dried cranberries
1 tbsp of cacao nibs
1 tbsp of pumpkin seeds
1/4 tsp of ground cinnamon
1 tbsp of agave
1 cup of oat milk

Directions:

Toss, toss, toss! That's really as simple as this recipe is! Add in the oats and then in no particular order, toss in the other remaining ingredients and then finish off with your oat milk. Lastly, grab a spoon and enjoy! πŸ˜‹

Happy Friday friends! For those of you who are new to my page I thought I would take a minute to introduce myself!
..Hi! My name is Laura and I am a Christian wife, mama of two, certified nutrition & wellness consultant, four-time published author, food blogger & podcast host! My life's mission is to do all I can to help heal our sick culture by teaching my followers, listeners and readers to listen to their unique bodies and to go back to a more ancestorial way of living!

Trust me-I get how discouraging and overwhelming the "health" space can be these days and therefore, my calling is to simplify it as much as possible and make healing more reachable for each and every person!

It is my belief that we were not meant to live this life in pain, depleted of energy, hormonally unstable and feeling lost. Instead, I believe that we were meant to live FULL lives (John 10:10) Β with healthy, pain free bodies that have the energy they need each day to fulfill their, unique God given purpose!
