Growing up, my grandmother would make cranberry casserole every single year around the holidays. It was a dish I looked forward to each year. But, as delicious as it was, it was unfortunately loaded with sugar and gluten. So, I decided a couple years back to tweak the recipe and make some swaps and come up with a LHWL approved version and I must say... it turned out amazing! This dish can be served as a side or as a dessert with a scoop of coconut milk ice cream! My daughter I think loves this dish even more than me and asks for seconds and thirds when I make it! Give it a try this holiday season!

Ingredients:
3 cups of diced Granny Smith or Gala apples
1 cup of organic coconut sugar
3 cups of organic cranberries (Wegmans is the only place I have ever found organic cranberries)
3 cups of organic quick oats
4 tbsp of Kerrygold butter (melted)
1 cup of organic maple syrup
1 tbsp of ground cinnamon
1 cup of chopped pecans
Directions:

Preheat your oven to 400 degrees. Then, chop your apples and combine them with the cranberries and coconut sugar and then place them in a 9 x 13 Pyrex dish. Then, in a medium bowl, combine the oats, butter, syrup and cinnamon together and then evenly disperse on top. Lastly, evenly sprinkle the chopped pecans over the oat mixture and place it in the oven to bake for 45 minutes. Then, allow it to cool for fifteen minutes on the stove top and then serve! ENJOY! πŸ¦ƒ

My new pumpkin risotto truly is healthy comfort food at it's finest! It's simple to make and perfect to pair with any main dish! Enjoy!

Ingredients:

-1 cup of organic Arborio rice
-2 cups of water
-1 cup of organic pumpkin purΓ©e
-1 tsp of ground nutmeg
-1 tsp of garlic powder
-2 tbsp vegan cream cheese (Violife)
-2 tbsp avocado oil
-1 tsp of salt
-1/2 oz of fresh organic sage (whole leaves)
-1 tbsp of pumpkin seeds

Directions:

Cook your rice according to it's package directions and then set aside. Then, in a small bowl mix together your pumpkin puree and spices and then proceed to fold in your rice. Serve your risotto in your favorite serving bowl, top with fresh sage leaves and pumpkin seeds for garnish and enjoy! πŸŽƒ

For a period of my life, the kitchen was the last place I felt at peace and there was a time when I wondered if I would ever feel safe and free around food again. There were days I wondered if I would ever feel energized and well again. Then there were days I wondered if I would ever accept my body again. It took years, but eventually, that day came.

Now, I won’t sugarcoat it (pun intended) and tell you that it came easily or that my journey was linear β€” because it wasn’t. In fact, truly learning to heal was one of the hardest endeavors of my life, with more setbacks than I could count. Yet at the same time, it’s been one of the most rewarding journeys I’ve ever taken.

From navigating an eating disorder and severe body dysmorphia at the age of 19, to walking through chronic rashes, fatigue, depression, fibromyalgia, and later infertility, I can look back and easily see how each dot connected me to where I am today β€” constantly finding myself back in the kitchen, cooking with the whole foods that God used to make me well (among other things)!

So, I don’t know where this post finds you today, but I pray it gives you some encouragement and hope. You are never too far gone, my friend β€” never too broken, too sick, or too scarred for God to heal you. So never lose heart, and believe that day by day, little by little, your healing can be found if you ask God to guide you. And hey, it just may very well start (and end) in your kitchen! πŸƒ

Who says apple pie has to wait till Thanksgiving Day? Why not have it for breakfast in a refreshing smoothie that takes five minutes to prepare? Give this go to breakfast smoothie a try and I know you will love it!

Ingredients:

1 medium Gala apple (sliced)
1 cup of oat milk
1 cup of ice
2 tbsp of almond butter
1 tbsp of maple syrup
1/4 tsp of nutmeg
1/4 tsp of cloves
1/4 tsp of cinnamon
1 cinnamon stick

Directions:

Grab your blender, toss your ingredients in and hit puree! Serve immediately in your favorite glass or mason jar and enjoy!

*This recipe makes three 8 oz smoothies. 🍎πŸ₯§

I often get asked how to eliminate cravings and boost energy and my answer is always the same: just eat real food that tastes as good as it is good for you! It really is that simple! So that being said, I am always on a mission to get in the kitchen and create healthy, whole food recipes for both my family and yours! Introducing, my new Quinoa Stuffed Acorn Squash that is loaded with flavor, fiber and energy boosting nutrients to keep you satiated and satisfied! Make this delicious dinner in minutes and I promise, it will not disappoint!

Ingredients:

-2 acorn squash (halved)
-1 cup of cooked organic tri color quinoa
-4 tbsp of avocado oil
-1 tsp of Ceylon cinnamon
-1/2 tsp of thyme
-1/2 tsp of ground cumin
-1/2 tsp of salt
-1/2 cup of dried cranberries
-1/2 cup of slivered almonds

Directions:

Preheat your oven to 375 degrees. Cut your acorn squash in half, scoop out the center and place them in a glass baking pan in the oven for 20 minutes. Simultaneously, bring your quinoa to a boil before turning it down to low heat and allowing it to cook fully. Next, combine your quinoa with your avocado oil, spices and almonds. Remove the acorn squash from the oven and evenly stuff each one with your quinoa mixture. Serve alone or alongside your favorite protein and enjoy! 🍁 🍽️
