Oatmeal just got a makeover you guys, and this time it has a pumpkin pie twist! Introducing my pumpkin pie overnight oats that will fill your belly with all of the comfort of fall and all of the energy your body needs to go about your day! This easy, make a head recipe can be made in under ten minutes and can set you up for success for the entire week ahead! Give it a go!

Ingredients:

1 cup of organic quick oats
1 cup of oat milk
3 tbsp of pumpkin puree
2 tbsp of maple syrup
1/2 tbsp of pumpkin pie spice
1/8 tsp of nutmeg
1/2 tsp of vanilla extract

Directions:

In a medium size bowl, combine the oats, oat milk, maple syrup and pumpkin puree and give it a stir. Then, mix in the vanilla extract as well as the pumpkin pie spice and nutmeg. Lastly, pour the oat mixture into a 16 oz mason jar and secure it with a lid. Allow it to sit in the fridge all night and then wake up, grab your mason jar out of the fridge and ENJOY!

NOTE: I recommend quadrupling this recipe and making a batch for the week ahead!

You guys! My fourth book Just Jump will be out in just a few short weeks and I can't wait to share it with you all! It is an over thinkers guide to getting unstuck, gaining traction and taking chances and it's the book I truly wish I had a decade ago when I spent precious time stagnant and not living up to my full potential!

God has plans for each us to fulfill in our lives but how often do we catch ourselves afraid to make the next move out of fear of what others may think, the chance that we may fail or the belief that we aren't qualified?

It's a vicious cycle and it's one that I pray this book will help you escape from if you yourself, are stuck in this loop!

Your future is bright my friends but playing it safe and staying in the same place won't move you closer to its door! So choose to be brave and make it a habit to "just jump" daily into your calling!

It'sss back! Pumpkin spiced season is here baby and I am determined to make this year's a healthier one! No longer does the fall mean that we have to flood our body with excess sugar and artificial colorings and flavors just to embrace these cozier days! There really is a healthy alternative to that PSL we all love and adore and I am sharing my version once again to remind you that festive can be healthy too! I spent the majority of my life not being able to cry not knowing that it signified a dysfunctional nervous system and one that didn't feel safe to reset. Now, I cry on average once a week, sometimes happy tears and sometimes sad but nevertheless, my tears have led me to healing both physical and emotional, more connection to God and more vulnerability and connection to others. Tears aren't weakness my friends. They are strength! ♥️📚

Today marks 15 years to the very day that I became certified as a nutrition and wellness consultant! It was all the way back on August 11th, 2010 that I began my quest to help our world rediscover the meaning behind true, optimal health and man, has it been a rewarding journey! It's not lost on me that my own uphill battle with my health in turn, lead me to one of the greatest discoveries of my life: that our bodies are indeed made to heal and function optimally if only we choose to support them and not work against them! We live in a toxic culture of chemicals, food-like substances, rigid dieting trends, confusion and body shaming that has led us to believe that health and fitness can't be simple and they most definitely can't be achieved by a less is more approach. Yet, from the moment my consulting company Live Healthy With Laura LLC was born, it has been my mission to prove otherwise and to lead my clients, my readers and my podcast listeners back to their ancestral roots and a way of living that I believe God intended for us! Seeing clients heal from the root and come off of medication, regain their energy and redefine their relationship with food, exercise and their bodies are just a few of the countless reasons I feel so incredibly fulfilled by this passion of mine that I get to call my "job". I am so incredibly grateful for each client and opportunity God has brought me in these last 15 years and I can't wait to see what and who He has in store for the future! 🥰🎉

When we were in Hawaii we passed by a gorgeous pineapple plantation and each morning we were served fresh, local pineapple! So yet again, I am sharing another (and one final) recipe inspired by our Hawaiin adventure before we embrace the fall! Make these pineapple muffins for a quick and healthy breakfast or snack on the go and enjoy a tropical paradise bite by bite! Enjoy!

Ingredients:

A blender
1 cup of fresh, chopped pineapple
1/2 cup of additional finely chopped pineapple for garnish (set aside)
2 eggs
2 cups of almond flour
1/3 cup of arrowroot flour
1/2 tbsp of baking powder
1/3 cup of agave
1 tsp of vanilla extract
2 tbsp of avocado oil

Directions:

Pre heat your oven to 350 degrees. Next, grab your blender and simply toss in the above ingredients in no particular order (eggs and all!) Lastly, evenly pour your mixture amongst your muffin tin and then bake in the oven for 30 minutes. Allow them to cool and then enjoy! 🍍🌞
