Last summer we made this meatless pasta dish, and it became a family favorite with all three kids. Nutrient dense and filling. Pasta of choice. Tonight we used gluten free penne pasta. For the sauce I used greens and veggies we had available. Kale, asparagus, onions, garlic, baby rainbow peppers, sea salt, broth, and broccoli. Sautéed in olive oil, and simmered in broth. Transfer to a blender and blend on high until smooth. Toss with pasta until well coated, and serve. Parmesan cheese as an optional garnish.
