There are two seasons for carrots β€” the spring and fall β€” but they are usually available in supermarkets all year. Today, on International Carrot Day, we celebrate all the different ways carrots can help our bodies work their best! πŸ₯•

Carrots are well known for improving eye healthπŸ‘€, but did you know they have lots of other benefits too? Carrots are rich in vitamins, minerals, and plant compounds that are all important parts of a balanced diet.

Week 3! Venture beyond the table by eating a variety of foods from all food groups. How about trying new foods and global cuisines?

Our RD and Director of Menus, Amani, cooks authentic Lebanese stuffed vegetables aka AblamaπŸ‡±πŸ‡§

Try it yourself at home:

Ingredients:
-1 pound lean ground beef
-1/4 cup pine nuts
-1 medium onion
-1 Tbsp pomegranate molasses
-7 spices
-Black pepper
-Salt

Toast pine nuts on medium heat for 5 mins. (You can add oil while toasting). Remove and set aside.

Cook the onion until translucent, add meat and cook with 7 spices, black pepper and salt until browned. Add 1 Tbsp pomegranate molasses and the pine nuts and continue cooking for another 5-10 mins on medium heat.

Once meat is ready. Start coring your vegetables!

Core vegetables of choice.
I used 12 small zucchinis, 4 small potatoes and 2 tomatoes.
Fill the vegetables with cooked meat.

To prepare the tomato sauce
Cook tomato core with 1 garlic clove, black pepper and salt. Add 1 cup tomato sauce and 1 cup water. Cover and let it simmer on low heat.

Stir fry zucchinis with 1 Tbsp canola oil in a non-stick pan until browned on each side. (Normally you would deep fry them but i chose to use fry them with 1 Tbsp oil for a lighter version)

Arrange vegetables in a baking dish, cover them with tomato sauce and bake at 400F for 40mins.
