This was a random, not much in the house meal that was a HUGE hit and I’ve made the kale this way twice since and was met with the same enthusiasm!

*baked sweet potato
*slow cooked pasture raised pork shoulder in an oniony broth
*the sprinkles in top: KALE! I put a bunch of kale pieces in a pan with avocado oil, nutritional yeast & TJs falafel mix (yes this combo again!) sautéed until crunchy and then sprinkled with sea salts! I swear it’s like savory crouton sprinkles with a cheesy edge!

*broiled grass fed flank steak
*roasted asparagus
*arugula salad with sun dried tomatoes & balsamic vinaigrette
*homemade roasted butternut squash soup (made over the weekend) topped with sea salt & pepitas
*my new favorite mocktail: lime juice, seltzer, lime bitters, splash coconut water

💥Million Dollar Breakfast Idea💥

I am only posting this crazy blurry photo bc I want it to live forever in my feed so everyone knows when I made it big as a food influencer 😂 But for reals, if you have kids especially: Popsicle Yogurt!

I was doing a freezer clean out and found some homemade popsicles. Rather than toss them I thought I’d defrost them overnight and add them to yogurt for something different. THEN I thought, I’ll have the kids help me - BINGO. This morning they saw me mix the melted popsicles into plain yogurt and immediacy lit up saying “we’re having popsicles for breakfast!?” Yes, kids, yes we are 😎
The popsicles were various berries and bananas mixed with coconut water and frozen. So nothing crazy but THEY think they are dessert. Add toppings and oh man, minds are blown! So here’s what you do:

1. Make popsicles out of fruit and coconut water. Forget about them for 6 months 😂😂😂
2. Enlist children to help defrost them so they know they were popsicles the next day.
3. Mix melted popsicles with plain Greek yogurt (protein), flax seed (omegas and fiber) and top with crushed nuts (fat & protein) and some keto granola like , and more fruit if desired.
4. Get ready for kid enthusiasm & full tummies while enjoying your own dessert for breakfast that keeps blood sugar in ✅

Steaks re-purposed. We grilled grass fed flat iron steaks for a birthday celebration and I purposefully grilled way too much so we would have leftovers, which have served the whole fam a whole other dinner and was enough for hub’s lunch all week!

Rethink leftovers so you don’t get bored. Here’s my fave steak makeover:
*greens dressed in tahini garlic sauce
*leftover whatever veggie you have (roasted cauliflower here)
*roasted fennel & squash (honeynut squash season has arrived!)
*leftover steak
*pepitas

Forgot to share a special dinner last week! It was the hub’s birthday! Birthdays are a big deal in our house so fancy dinner, the red plate and dessert are all on the table!

*homemade tabbouli (soooo easy to make ahead and bulgur is a no-cook grain!)
*salad: butterleaf, beets, pepita, feta, balsamic
*seared grass fed lamb chops
***dessert was “snickers” dates which are not beautiful in a photo so I’ll post on stories 😂

Baked Spaghetti Squash 🤤

1. Bake your spaghetti squash ahead of time and scoop out of shell. I do this over the weekend for fast weekday meal prep.
2. Sauté some veggies, garlic and onion in avocado oil. I used mushrooms & zucchini.
3. In a casserole dish, layer Cooke spaghetti squash, jarred tomato sauce, sautéed veggies & goat cheese until you run out of ingredients.
4. Bake at 350 for 20min and give a good stir before serving to get that gooey goat cheese everywhere.
5. Add some premade meatballs or go meatless with some tempeh crumbles.

***this side salad is also 💣 and has been my go-to lately. Butterleaf, lemony olive oil dressing, Zataar seasoning & roasted pinenuts

I feel like artichokes always up the fancy of a meal. It they’re sneaky because they really aren’t hard at all! Especially if you have an instant pot-set it for 20min and forget it! Fiber, antioxidants, probiotics and the perfect solution for those who could use some practice slooooowing down when they eat.

*flank steak with steak sauce and broiled
*roasted broccoli, charred to perfection

The simplest meals can often be the most satisfying. Love frittatas for their simplicity, their flexibility and their ability to feed a crowd.

1. Sauté onions and pretty much any veggie you want in olive oil in a cast iron or oven safe pan.
2. Add mixture of 10-12 eggs, 4 Tbls cream or coconut milk or broth and any seasonings you like.
3. As mixture starts to set add dollops of goat or feta cheese. Let cook a couple minutes
4. Move entire pan to oven set at 400 for 10-12 min.
5. Serve with a salad or quinoa or crusty bread and toppings like avocado, hot sauce or h**p seeds.

Ok so this isn’t technically poke because the salmon is cooked but it’s got the right flavors and vibe and is a great alternative for those who don’t enjoy raw fish (or the insane amount of sugars and oils in poke sauces).

*mix of jasmine rice cooked in bone broth (and cooked to be stickier) and cauliflower sushi rice (it’s super easy and really yummy!)
*homemade pickled cucumbers
*wild salmon baked in lemon juice, tamari & furikake
*seaweed snacks

Strawberry (cottage) Cheesecake! I made the viral cottage cheese cookie dough a while back and this is the first step before mixing in flours. I licked the spoon and thought “whoa that’s cheesecake!” 🤯

*1 cup cottage cheese
*2 Tbls honey or other sweetener
*splash vanilla
—> blend in a blender until smooth then top with berries & crushed nuts (or graham crackers for true cheesecake essence)
