Apple Spinach Salad for Memory Support

Ingredients:
• 6 cups baby spinach
• 2 apples (Pink Lady and Granny Smith), thinly sliced
• ½ small red onion, thinly sliced
• ½ cup walnuts or pecans, toasted
• ⅓ cup dried cranberries
• ⅓ cup crumbled goat cheese (or feta)

Apple Cider Vinaigrette:
• ⅓ cup olive oil
