Ingredients
โข6 garlic cloves, finely chopped
โข1 cup unsweetened pineapple juice
โข3/4 cup ketchup
โข1/2 cup GF soy sauce or coconut aminos
โข1/2 cup light brown sugar packed
โข3 tablespoons of ginger, finely grated
โข1 teaspoon red chili flakes for heat, optional
โข4 boneless, skinless chicken breasts
โข1 tsp. vegetable oil, plus more for grill
โข1 pineapple, cored sliced into rings, rings halved
โขThinly sliced scallions, for serving
โขSalt & pepper to taste

โขIn a large bowl, whisk garlic, pineapple juice, ketchup, soy sauce, brown sugar, red chili flakes, salt, pepper, and grated ginger until combined.
โขPlace chicken in a large storage container with an airtight lid or a resealable plastic bag. Pour in marinade. Refrigerate for at least 2 hours and up to overnight. The longer the better!
โขPrepare a grill for high heat; preheat 5 minutes (or heat a grill pan over high heat). Clean and oil grates.
โขGrill chicken, basting with marinade and flipping occasionally, until charred and an instant-read thermometer inserted into thickest part registers 165ยฐF, about 8 minutes per side. Transfer to a plate.
โขIn a medium bowl, toss pineapple with oil. Grill pineapple, flipping occasionally, until charred, about 2 minutes per side.
โขTransfer chicken and pineapples to a platter. Top with scallions if desired and enjoy.

As with any recipe, this is simply a base guideline to build from. Make it your own by increasing, lowering, or omitting the herbs & spices or by adding additional herbs and spices. Switch out the sugar for honey or other sweeteners. You can add additional vegetables like sliced onion and bell peppers to the marinade too!
This recipe easily doubles or triples, no special alterations to measurements required.
No grill, no problem. This recipe is delicious prepared using a grill pan or even baked/broiled.
You want to use unsweetened pineapple juice if possible. If you canโt find unsweetened juice, you can reduce or omit the additional sugar/honey. Otherwise, you will find the marinade overly sweet.
You can replace the light brown sugar with honey if youโd prefer. Remember honey is sweeter than sugar so you will need less. Substitute 1/3 cup of honey in place of the 1/2 cup light brown sugar.
You could use bone in breasts or any other chicken pieces you preferred. Be sure to adjust the cooking temp/time to account for these changes if you do.
Many brands of ketchup are gluten-free but be sure to check the labels to be sure as manufacturing processes and product recipes can change quickly and without warning. If you have celiac disease or are especially sensitive to gluten, consider purchasing a certified gluten-free product.
