🥕 Carrot & Ginger Soup 🍵
This comforting soup is rich in beta-carotene, antioxidants, and anti-inflammatory properties, helping support immunity and skin health!
Ingredients:
-4 medium carrots, peeled and chopped
-1 tablespoon fresh ginger, grated
-1 small onion, chopped
-2 cups vegetable broth
-1 tablespoon olive oil
-Salt and pepper to taste
-½ teaspoon turmeric (optional for extra health benefits)
Instructions:
1. In a pot, heat olive oil over medium heat. Add the onion and ginger, cooking for 3–4 minutes until softened.
2. Add the chopped carrots and vegetable broth. Bring to a boil, then reduce to a simmer and cook for 15–20 minutes until the carrots are tender.
3. Use an immersion blender to blend the soup until smooth (or transfer to a regular blender).
4. Stir in turmeric (optional), and season with salt and pepper to taste.
5. Serve warm and enjoy a soothing, nourishing meal.
