🌄 MINER’S NEEDLE SUMMIT — WE DID IT! 💪🏼🌵

This wasn’t just a hike—it was a journey. At over 60, my husband and I are still pushing our limits, one desert trail at a time. Our latest adventure took us deep into Arizona’s Superstition Wilderness, where we hiked to the summit near the iconic Miner’s Needle.

We’ve tackled Flatiron (twice!), scaled the mountain beside Praying Hands, looped around Derrick Trail, and now—stood face to face with one of the most spiritual places we’ve ever experienced.

Rock formations that felt ancient
🌵 Cactus forests with character
🐦 Wildlife and total stillness
💨 Wind in our faces as we sat near the Needle, taking it all in

We took over 400 photos, but the real takeaway? We’re grateful for every mile, every view, and every chance to move, explore, and thrive—right now. 💚

I took this summer fruit staple and turned it into something boldly savory, hydrating, and packed with flavor — think broiled smoky watermelon nuggets, crunchy pickled watermelon rind, crispy fried enoki mushrooms, and a spicy habanero drizzle that pulls it all together.

Served on soft corn tortillas with fresh greens, avocado, cherry tomatoes, and garnished with finely chopped carrots + radishes — these tacos were next-level refreshing, satisfying, and totally plant-powered.

Watermelon isn’t just for snacking anymore… I’m using every part of it, rind included. 🍉✨
