Grilled cod and raw broccoli:
•ingredients:
▪︎two wild-caught cod filets
▪︎1 can organic black beans.
▪︎Two poblano peppers de-seeded and chopped ▪︎Two roma tomatoes, chopped.
▪︎Half an onion, chopped.
▪︎ quarter pound tomatillos (you can use canned salsa verde instead).
▪︎1 tsp Chilli pepper
▪︎1/2 teaspoon smoked paprika
▪︎ cumin sprinkle
▪︎1/2 tsp coriander
▪︎2 cloves garlic, minced or chopped
▪︎salt to taste.
☆ pan-sear/pan-grill the cod. *I have an electric burner that I use to grill fish and shrimp outside. It avoids a lingering fishey smell in the house. I also use my air fryer outside to airfry brussel sprouts or cauliflower. Both of which leave the house smelling not-so-great.
☆ frozen wild-caught cod filets are available in the freezer section of our local Costco. Individually wrapped. You can thaw in the fridge. I just place the frozen filets in the pan while frozen. Heat a pan, spray with avocado oil, place cod filets, and let cook. Once browned on one side, flip and brown the other side. Remove from heat when done.
Topping
•salsa:
▪︎in a small pot, spray avocado oil, add diced onions, cook for 3-5 minutes, until softened. Add minced garlic and stir for 30 seconds, then add diced tomatillos, season with salt, cover, and let simmer.
▪︎in a separate pan, spray oil and cook the diced peppers for 3 mins, then add tomatoes. Cook for another 3 minutes, then add the can of beans and all the spices. Cover and let simmer for 5 minutes.
☆top the fish with both cooked mixtures, with a side of raw broccoli.
