If you are leaving kids at home this summer and wants some easy options for them to reheat, these make head eggs are great, quick and easy, breakfast prep.

It worked for me... until it didn't....

If you have been around since I began this blog (over 10 years ago!), you know that in those earlier years, I would often field the question of “How do you meal plan” by telling you that I didn’t.

I worked from home, and had babies at home, and I feel like most days back then, I was flying by the seat of my pants! There is absolutely nothing wrong with that if it is working for you.

And it actually did work for me…until it didn’t. As the girls have gotten older, even though I still work from home, we are pulled away from home more often between school, after school activities, friend’s houses, and teens that want to “do something fun this weekend,” that I need to have meals more thought out.

We probably have more downtime than the average American, and so I can confidently say that if I’m finding meal planning helping our schedule, I would imagine so many of you would benefit from some meal planning hacks…like make-ahead breakfast sandwiches!

I started making these little breakfast sandwiches in bulk when we had a number of days or weekends where we had to “be somewhere,” or in a car earlier than our usual, and I still wanted something filling and healthy for my family to eat.

When life gets busy, it is ok to not want to compromise on the food filling up your family. In fact, it is in those busy seasons that your family needs nutrient dense, healthier food that counts the most!

Those little fast food Sausage McMuffins with Egg are such a convenient idea, but not only can we save money by making our own (I break this down for you in the post!), our bodies are going to feel SO much better when we fuel with ingredients that are sourced well too.

Take a little time to make some up this week for the week ahead!

I snapped this quick last night after my 11 year old came inside from playing to get ready for bed. 🩷

She made a beeline to the stove and said, "I need a good snack before bed so I can sleep good for school tomorrow!" 🍳🍎

She put this little plate of eggs and apples together, and I just wanted to share the simplicity. Quite frankly, her bedtime snack is usually even simpler than this - a scoop of butter is her go-to! 🧈

Dear momma, a fatty snack before those kids go to bed is your ticket to a great night of sleep. Obviously, they need to be eating well all day, but I've found a simple scoop of butter to be a golden ticket to kids that sleep all night! 😴

So! I'm putting a post together today with a big list of snack ideas for toddlers to teens, because I know not every kid will just grab a spoon full of butter as a choice for a snack. This will be a great resource for you and the kids to read together on the WHY behind the type of snack before bed, and also some great kid friendly options that will satiate and stabilize blood sugar before they sleep! 🩷

OATMEAL ENERGBY BALLS:
1 cup old fashioned oats
⅔ cup shredded coconut
¾ cup peanut butter
½ cup ground flaxseed
½ cup mini semi-sweet chocolate chips
⅓ cup honey
1 tsp vanilla extract
⅓ cup sliced almonds

MONSTER COOKIE ENERGY BALLS:
3 Cups Quick Oats
1 Cup Peanut Butter smooth
½ Cup Honey
⅓ – ½ Cup Mini M&M’s Candy

PEANUT BUTTER JELLY ENERGY BALLS:
2 cups Old Fashioned oats
1 – 1⅓ cups creamy peanut butter
¼ cup agave nectar
2 tbsp ground flax seeds
1 tbsp chia seeds
¼ cup raspberry jam
