These make-ahead Casseroles are perfect for Cinco de Mayo, packed with savory layers and ready when you are ππ π²π½
Ingredients
π£ Doritos Casserole
2 cups Doritos, finely crushed
1 cup Doritos, loosely cushed
1 pound ground beef
Β½ yellow onion, diced
1 teaspoon garlic, minced
12 ounces frozen corn
1 packet taco seasoning
1 (14.5-ounce) can petite diced tomatoes with green chilies, NOT drained
1 cup sour cream
3 cups Mexican cheese blend
Sliced green onions, diced tomatoes, shredded lettuce, avocado, sour cream (for optional garnish)
π£ Taco Lasagna
4 flour tortillas 10-inch or 9-inch
1Β½ pounds lean ground beef
Β½ cup sweet yellow onion finely diced
2 tablespoon garlic fresh minced
2 ounces mild taco seasoning (or add 4 tablespoons of our homemade taco seasoning)
1 cup water
2 cups chunky mild salsa divided
15 ounces black beans drained, rinsed, and divided
3 cups fiesta blend shredded cheese divided
2 tablespoons chopped cilantro optional garnish
sour cream optional topping
fresh pico de gallo optional topping

2 pounds lean ground beef
1 cup finely chopped yellow onion
1 cup water
2 ounces taco seasoning
20 ounces Rotel drained
15 ounces canned black beans drained and rinsed
16 ounces jar salsa I used mild
18 soft yellow corn tortillas
6 cups colby jack cheddar cheese freshly shredded
Optional Garnish
1 cup diced roma tomatoes,
Β½ cup thinly sliced green onions,
Sour cream
π£ Chicken Enchilada Rice Casserole
2 tablespoons olive oil
ΒΎ cup small diced yellow onion
ΒΎ cup small diced red bell pepper, stem and seeds removed
1 teaspoon garlic powder
1 teaspoon dried oregano
Β½ teaspoon salt
ΒΌ teaspoon black pepper
1 Β½ cup uncooked Jasmine rice,
2 cups chicken broth
19 ounces enchilada sauce, divided (1 cup to cook rice and 1 β
cups sauce to mix into the remaining ingredients)
3 cups pre-cooked and shredded chicken breast meat
15.5 ounces black beans, drained and rinsed
15.25 ounces whole kernel yellow corn, drained
2 cups shredded sharp cheddar-jack cheese,
1 Β½ tablespoons finely chopped fresh cilantro, optional garnish
