I guess I'm am anxious for spring. Seeds arrived. Now to get them started. My house will have baby plants everywhere until May! Sorry . Anyone else starting seeds? Anyone up for a seed/seedling swap? I am finally feeling the first big stretches after a long winter of hibernation.

Meal prep for the week is almost done. It works out so much better (and I eat healthier) when everything is already prepped.
Menu for the week
* Mushroom and spinach leek soup- pureed, salad
* Apple cheddar chicken sausages, sweet potatoes, broccoli
* Chicken, delictica squash, aspargus, and salad
* Pork chops, applesauce, oven fried potatoes, salad
* Beef tacos with fresh tomatillo salsa, adzuki beans, zuchini
I also roasted beets and garlic for add-ins throughout the week and ranch dressing and poppy seed vinegarette.
Switchel, iced tea, sourdough bread, and honey roasted nuts already made.
I'm planning on kale salad with apples and goat cheese stuffed figs for some additional snacks.
Now, just some muffins for breakfast and clean up 😅

Goodbye October. You have been an amazing month of beautiful skylines, time with my kiddos, and seeing my love shared with new family through my son. All the while feeling the deep transformation of seasons, sunsets and sunrises, and new ways of relating to the world. Death of the old allows space for the beautiful rebirth of the new!

Fall food! If you know me, you know i am big on soups, but last night I was craving something different, scallops. Roasted delectica squash was perfectly balanced with the white wine garlic butter sauce of the scallops. Pair in a greens salad with mushrooms and a warm bacon tomato vinegarette. Mmmm! And almost all the colors, too!
