Dietitian Eats! Hatch Verde Chicken Soup
Hatch Verde soup jar
1c water
1/2 frozen bag peppers+onion
1 Pablano pepper, chopped
1 can corn, not drained
1 can jalapeño black beans, not drained
4 chicken thighs
Taco seasoning
S&P EVOO
Toppings: avocado, Roma tomato, shredded cheese, lime, sour cream
Bake chicken 400 degrees x 25min. Top with EVOO, taco seasoning, dash s&p
In large pot sautee peppers/onion with EVOO & dash s&p. Add soup jar, 1c water, corn, beans, cooked chicken. Simmer 15-20min. Add toppings
& serve. Serves 6-8
Paired with homemade bread. 😁
