I’ve been thinking a lot about my Grandma today, who recently passed.

She was so grateful for all of the big and small things in her life, even when she was at her worst. She kept a list by her chair of all of the prayers answered.

There is so much that can be learned from how she lived her life with gratitude and faith.

Showing gratitude for the things we DO have is so powerful!

I am grateful for my body and all that it does for me; including breathing, swalowing, digesting, lifting and carrying heavy things, getting down on the floor to play with my kids, and the energy to care for them.

I am so grateful for the examples in my life of what it looks like live by faith.

I am grateful for the people in my life who inspire me to take care of my physical and mental health.

I am grateful for the friends and family who care for and love our kids as much as we do. We are so blessed.

Prepping for the week might look different some weeks. This week I made a big Mediterranean inspired chicken bowl. Hubby is home this week, so I didn’t bother portioning it out into individual containers.

Didn’t really measure anything out this time 🤷‍♀️

Grilled chicken
Diced cucumber
Diced onions
Diced bell pepper
Halved cherry tomatoes
Chickpeas
Feta
Drizzle of olive oil
Lemon juiced
Chopped basil and dill
I added olives to mine later because Hubbs doesnt like them

Waalaahh! Lunch for a few days that is packed with protein and fiber 👏
