Taco Cupcakes
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
• 1 lb ground beef/turkey
• 1 packet taco seasoning
• 12 wonton wrappers
• 1 cup cheddar cheese
• ½ cup salsa
• ¼ cup sour cream
• ¼ cup diced tomatoes
• ¼ cup chopped cilantro
• 1 jalapeño, sliced
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
1. Preheat oven to 375°F (190°C). In skillet, cook ground beef over medium heat until browned. Drain excess fat. Stir in taco seasoning.
2. Spray muffin tin w/ non-stick cooking spray. Place a wonton wrapper into each cup, pressing it gently to fit shape of the cup. Spoon a Tbs of taco meat into each cup, top w/ a bit of salsa & shredded cheese. Place another wonton wrapper on top & repeat layers (meat, salsa, cheese).
3. Bake taco cupcakes in preheated oven for 10-12 minutes, or until edges are golden brown &crispy.
4. Remove taco cupcakes from oven and let them cool slightly. Top each w/a dollop of sour cream, diced tomatoes, chopped cilantro, or jalapeño.
