Almond Plum Cake With Crรจme Fraiche

Ingredients
- 1 cup almond paste (9 oz.)
- 1 teaspoon baking powder
- 15 grams Butter
- 1 cup cake flour
- Crรจme fraiche and slivered almond for serving
- 6 eggs
- 1 ยผ cup granulated sugar
- 3 large plums (12oz) halved, pitted and cut into ยฝ inch wedges
- ยผ teaspoon salt
- 1 vanilla-bean โ€“ split lengthwise seeds scraped, pod reserved for another use
- 1 teaspoon pure vanilla extract

Preparation

Preheat the oven at 350F degrees.

Butter and flour a 9-inch springform pan. In a small bowl, mix the cake flour with the baking powder and salt.

In a bowl of a standing mixer fitted with a paddle, beat the sugar with the almond paste until crumbly.

Add the butter and beat at high speed until light in color and fluffy, about 2 minutes.

Add the eggs, one at a time, beating until fully incorporated between additions.

Beat the vanilla extract and vanilla seeds.

Gently fold in the flour mixture until fully incorporated.

Scrape the batter into the prepared pan. Arrange the plums over the top of the batter.

Bake for 1 hour and 5 minutes, or until the cake is deeply golden and a toothpick inserted in the center comes out clean.

Transfer the cake to a rack and let cool for 15 minutes.

Run a knife around the edge of the cake and remove the outside ring of the pan.

Let the cake cool for at least 30 minutes longer.

Serve warm or at room temperature topped with crรจme fraiche and slivered almonds.

Make ahead:

The cake can be made one day ahead and stored in an airtight container at room temperature.

Lemon Cucumber Salad

Ingredients
- 1 teaspoon chopped chili pepper
- 1 tablespoon chopped fresh lavender, (optional)
- 1 pound lemon cucumbers, thinly sliced
- 2 tablespoons olive oil
- 1/2 red bell pepper
- red leaf lettuce leaves
- 1 medium red onion, thinly sliced
- 3 tablespoons rice wine vinegar
- salt and freshly ground black pepper, to taste

Preparation

In a small bowl, combine vinegar, oil, chili pepper and lavender if using.

Season with salt and pepper.

In a medium bowl, combine cucumbers, onion and red pepper.

Pour over dressing and toss to coat.

Let stand for 10 minutes.

Arrange lettuce leaves on individual serving plates.

Spoon a generous amount of salad over leaves.

Serve right away.

Broiled Tofu

Ingredients
- 3 tablespoons balsamic vinegar
- 2 teaspoons catsup
- 1 block, (12 oz.) extra-firm or firm Chinese tofu (in water)
- prepared hoisin sauce or marinade
- 3 tablespoons soy sauce

Preparation

To press the tofu, sandwich the tofu between two plates. Weigh the top plate with a heavy book, and press for 30 minutes.

Remove the weight and top plate, and empty the water from the bottom plate. The tofu is now ready.

Preheat the broiler.

Slice the pressed tofu into thirds lengthwise.

Place the tofu on a lightly oiled baking sheet and spread the tofu with the marinade.

Broil the tofu 3 to 4 inches from the heat for 5 to 7 minutes on each side, until browned and crisp on the edges.

Serve it straight from the oven or make a tofu sandwich on toasted multigrain bread topped with your favorite condiments.

Makes 2 servings.

Bridget Jones's Shepherd's Pie

Ingredients
- 2 onions, finely chopped
- 2 tablespoons olive oil
- 600 grams minced lamb
- 2 tablespoons plain flour
- thyme
- rosemary
- 1 small tin chopped tomatoes
- 100 milliliters chicken, beef or lamb stock
- salt and freshly ground black pepper
- 700 grams potatoes
- 55 milliliters milk
- 75 grams butter
- 1 free-range egg yolk

Preparation

Preheat the oven to 180 degrees Celsius.

In a large frying pan, heat a little olive oil and fry the chopped onion and garlic.

Add the mince, stirring, until browned all over.

While the meat is frying, break up any lumps with the back of the spoon.

Add the flour (this helps to thicken the juices) and stir.

Mix well and add the thyme and the rosemary and stir.

Add the chopped tomatoes and pour the stock mixture.

Add a pinch of salt and freshly ground black pepper and let it simmer for about 5 minutes.

For the mash, boil the potatoes, then drain them in a sieve and place into a clean bowl.

Add the milk, butter and egg yolk, and mash together.

Season with salt and freshly ground black pepper.

Pour the meat into an ovenproof dish and spread the mash on top, smooth over and mark with a spatula.

Put the dish into the oven and cook until the surface is bubbling and golden-brown.

Spiced Lamb Meatballs With Lemon Mint Yogurt Sauce

Ingredients
- 2 tsp curry powder
- 1 tablespoon extra virgin olive oil
- 1 tablespoon finely chopped fresh mint
- 2 tsp garam masala
- 1/2 teaspoon minced garlic
- 1 tablespoon minced garlic
- 2 tablespoons finely grated ginger
- 1 1/2 pounds ground lamb
- 1/2 pound ground turkey
- 1/2 teaspoon Kosher salt
- finely shredded zest of 1 lemon (use a Microplane zester)
- 1 1/2 cups (14 oz.) low fat Greek yogurt
- 1 tablespoon olive oil
- pitas for serving
- 1 teaspoon salt & 1 tsp pepper

Preparation

To make sauce, combine all sauce ingredients (Greek yogurt, lemon zest, 1 tablespoon mint, 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/2 teaspoon minced garlic) in a small bowl and set aside until ready to serve meatballs.

Chill, if desired.

To make the meatballs, start by preheating the oven to 400 degrees Fahrenheit.

Next, combine ginger, 1 tablespoon garlic, curry, garam masala, salt, and pepper.

Add meats and gently combine with hands until spices are just evenly distributed.

Do not overmix.

Gently roll meat into 1 1/2 inch balls and set on a rimmed baking sheet or jelly roll pan.

Roast meatballs for 20-25 minutes until browned on the outsides and cooked through.

Transfer meatballs to a serving dish and serve with yogurt sauce and toasted pitas.

Chipotle-salsa Burger

Ingredients
- 4 slices cheddar
- 2 inches chipotle peppers adobo, minced
- 1/4 cup egg beaters or other egg substitute
- 1 clove garlic, minced
- 3 tablespoons Panko or other bread crumb
- 4 slices red onion
- 8 tablespoons salsa
- 1/2 teaspoon salt
- 4 whole wheat hamburger bun

Preparation

Combine everything but onion, salsa, and buns in a large bowl, shape into four patties.

Heat a skillet sprayed with non-stick over medium-high heat. Cook burgers until done (160F degrees internal temperature) about 5 minutes a side.

Top with cheese (if desired), one onion slice and two tablespoons salsa.

Berry Fruit Crumble

Ingredients
- 4 cups mixed berries, fresh or frozen
- 1 tablespoon maple syrup
- 1/3 cups old fashion oatmeal
- 1/3 cups almond meal
- 4 teaspoons brown sugar, packed
- 1 teaspoon ground cinnamon
- 7 teaspoons light margarine or butter

Preparation

Preheat the oven to 350F degrees.

In a baking dish add berries and maple syrup, give a light stir, set a side.

In a small bowl, add oatmeal, almond meal, brown sugar and cinnamon.

Mix well, add butter and crumble together with a fork.

Add the oatmeal topping to the mixed berries.

Place in the oven and bake for 30 minutes, until the top is light golden brown.

De-light-ful Gingerbread With Butterscotch Sauce

Ingredients
- 1/2 cup butter
- 1/2 cup sugar
- 1 cup molasses
- 2 eggs
- 1 cup boiling water
- 2 1/2 cups flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon allspice

Preparation

Preheat the oven to 350F degrees.

Stir together the flour, soda, salt and spices.

Cream the butter and sugar; add molasses and eggs, mixing well.

Stir in the boiling water and then all the dry ingredients.

Pour into a buttered 9 x 13 baking pan.

Bake for about 40 minutes or so or until a toothpick comes out clean..

Serve warm or cold, topped with a scoop of vanilla ice cream.

Mom's Mushroom Soup

Ingredients
- 3 C sliced baby bella mushrooms
- 4 C beef broth
- 1 can full fat organic coconut milk
- 3 Tbsp ghee, split 2 Tbsp and 1 Tbsp
- pinch of pepper
- 1/2 vidalia onion, thinly sliced

Preparation

Melt 2 Tbsp of ghee in a medium stock pot and then add sliced onions to lightly caramelize.

Simmer on medium for approximately 5 minutes, stirring frequently, and then turn to low for an additional 3-5 minutes.

Add sliced mushrooms and coat in ghee/onion mixture.

Add in additional Tbsp of ghee and cook mushrooms for another 4-5 minutes on low.

Add beef broth and bring to a simmer for 5 minutes.

Pour coconut milk while stirring and simmer for an additional 2-3 minutes.

Add pepper to the soup, and serve.

Pesto + Manchego + Marcona Almond

Ingredients
- 2 cups basil, loosely packed
- 3/4 Manchego cheese
- 3/4 extra virgin olive oil, divided (1/4 cup + 1/2 cup)
- 1/4 cup Marcona almonds
- salt + pepper to taste

Preparation

Soak almonds in water for fifteen minutes.

Wash and dry basil leaves.

Grate cheese.

In a food processor we're going to put our basil, the cheese, soaked almonds, a little salt and pepper, and 1/4 cup of extra virgin olive oil.

Process it on and off for thirty seconds.

Then drizzle in the rest of the olive oil while the food processor is on.

This makes sure you get the optimal consistency for your likings.

When it's made fresh the oil tends to separate from the other ingredients.

Serve this after it's been in the refrigerator for an hour because the pesto rests and stays together better.

There are many serving options.

Transfer it to a bowl and serve it with an assortment of cheeses and crostini, or dress pasta with it, or marinade chicken, or, make a delicious Manchego potato pesto pizza.

Butternut Squash And Tahini Soup

Ingredients
- 2 tablespoons olive oil
- onion
- red pepper flakes
- 2 pounds - butternut squash
- 1 sweet potatoes (optional)
- 1 cup red lentils
- 5 cups stock
- 2 tablespoons tahini paste

Preparation

Heat the oil and add the onion and pepper flakes. Cook over medium heat for 2-3 minutes or until the onion is soft.

Reduce the heat to low, add the squash and potato (if using), cover and cook for 5-7 minutes stirring from time to time.

Add the stock and lentils and simmer until the soup is cooked.

Leave it to cool for a little bit and puree it in a food processor or blender. Return to the pan, add the tahini paste and heat gently.

Serve hot.

Flank Steak With Herbed Salsa

Ingredients
- 1 cup cilantro, finely chopped
- extra virgin olive oil
- 1 1 pound flank steak
- 3 garlic clove, minced
- ยฝ large jalapeno, seeded and minced ( whole 1 if brave)
- 1/2 lemon, juice of
- juice of large ยฝ lime
- salt and pepper
- 4 scallions, white only finely chopped
- 2 medium tomatoes, finely chopped

Preparation

Preheat a grill pan or light a grill.

In a medium bowl, combine the tomatoes with the scallions, cilantro, jalapeno, garlic and lemon lime juice.

Season the salsa with salt and freshly ground pepper.

Season with salt and pepper the flank steak.

Using a grill pan brush a shadow of oil on the bottom of it.

Place the pan over high heat and when hot add the flank steak.

Cook until nicely charred outside and medium rare inside. About 3 minutes per side.

Transfer the steak to a carving board and let rest for 5 minutes.

Thinly slice the steak across the grain and serve with the herbed salsa.

Creamy Tomato Soup

Ingredients
- 1 tsp. black pepper
- 3 cups chicken broth, divided
- 1 cup evaporated milk
- 3 tablespoons flour
- 1/2 teaspoon dried basil (4 leaves fresh)
- 1/2 teaspoon dried thyme (2 sprigs fresh)
- 2 tablespoons olive oil
- 1 large onion, diced
- 1 tsp. salt
- 1 teaspoon Splenda
- 3 tablespoons tomato paste
- 2 16-ounce cans diced tomatoes, undrained (2 pounds diced fresh)

Preparation

In a large saucepan heat oil over medium heat.

Add onion and seasonings and cook, stirring occasionally, until onion is tender and golden.

Add tomatoes and tomato paste. Stir and simmer for 10 minutes.

In a small bowl whisk together the flour and 1/4 cup of the chicken broth.

Stir into tomato mixture until well blended.

Add the remaining broth.

Simmer for 30 minutes, stirring frequently.

Puree with an immersion blender until smooth.

Add the Splenda and evaporated milk.

Heat through.

Cilantro Lime Coleslaw

Ingredients
- ยฝ purple cabbage, chopped
- ยฝ white cabbage, chopped
- 2 cups carrots, shredded
- ยฝ cup fresh cilantro, finely chopped
- 12 stalks green onion, sliced
- 2 jalapenos, diced
- 1 cup unsalted pepitas
- 1 cup of buttermilk
- ยฝ cup mayonnaise
- 3 tbsp sweet relish
- 1 tbsp vinegar
- juice of 1 lime
- salt and pepper to taste

Preparation

In a large bowl toss cabbage, carrots, green onions and pepitas together until combined. Set aside.

In a small bowl whisk together mayonnaise, buttermilk, jalapenos, cilantro, lime juice, relish and vinegar until combined.

Pour dressing over the vegetables and toss to combine.

Taste and season with salt and pepper according to preference.

Chill until ready to serve.

Lumpiang Shanghai

Ingredients
- 3/4 cup carrots, peeled and minced
- 25 eggroll wrappers
- 3 cloves garlic, minced
- 1 teaspoon green onion, sliced thinly
- 1 ยฝ tsp soy sauce
- 1 teaspoon ground black pepper
- 1 pound ground pork
- 1/2 teaspoon salt
- 3/4 pound fresh shrimp, peeled and minced
- vegetable oil
- 3/4 cup water chestnuts, peeled and minced

Preparation

Mix pork, shrimp, garlic, carrots, water chestnuts, green onion, soy sauce, salt and pepper.

Use your hands if necessary, but mix everything in to ensure that it tastes every ingredient in every bite.

Place one heaping tbsp of the mixture in an eggroll wrapper and adjust to form a line.

Roll the wrapper tightly.

Keep doing this until all the pork-shrimp mixture is used up.

Deep fry in vegetable oil until golden brown.

Skinny Carrot Fritters

Ingredients
- 2 cups baby carrots
- 1/8 cup bread crumbs (Italian style)
- ยฝ tsp cayenne pepper
- 1 cup chickpea flour
- 1 tbsp. cilantro (chopped)
- ยพ tsp salt
- ยฝ tbsp. sriracha sauce
- 1/8 cup water

Preparation

Grind the carrots in a grinder.

(You may grate the carrots as well if desired).

In a mixing bowl combine all the ingredients and mix properly with a spoon.

Let it stand for a few minutes.

In the meantime heat the nonstick pan/griddle in a medium flame.

Grease the pan with cooking spray/oil.

Pour the 1 tbsp. spoonful of the mix onto the pan and cook for some time.

Once it starts to cook, flip to the other side and cook for a few minutes or until light golden in color and lightly crispy in texture.

Serve hot or at room temperature.

Navajo Fry Bread By Mommie Cooks

Ingredients
- 1 pd sausage
- 1 bunch cilantro, chopped
- 1/2 onion, chopped
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon oregano
- 1 tablespoon water
- 1 tablespoon tomato paste
- oil for frying
- 1 teaspoon coriander

Preparation

For the fry bread dough, mix together all the listed ingredients; the flour, milk, baking powder, and salt.

Allow the bread to rest for at least 10 minutes.

While the dough is resting, grab a frying pan and start cooking up the meat for a minute or two.

Add to the meat the garlic, cilantro, and onion.

Cook the meat all the way through and then add in the cumin, chili powder, and oregano

Mix it up well and then add in the water and tomato paste

Stir it all together and turn the heat down to low to keep warm

Grab a clean frying pan and pour enough oil in the bottom to create about a 1" depth of oil. Turn the heat on medium high and allow it to heat up.

While the oil is heating, take the rested dough ball, rip off a chunk and roll it out thin with a rolling pin.

Drop the rolled bread into the hot oil and allow it to cook up for about a minute on each side or until golden brown.

Serve meat on top of bread along with additional desired toppings.

Ultimately healthy and tangy! ๐Ÿ…๐Ÿฅ—๐Ÿง€

Fresh Lentil Salad

Ingredients
- 1 1/2 cups green lentils
- 1 seedless english cucumber
- 3 cloves of garlic
- juice of 1 lemon
- handful of mint
- olive oil
- handful of parsley
- 1 medium red onion
- salt and pepper
- 1/2 of a yellow onion

Preparation

In a pot, place lentils, 1/2 yellow onion and garlic cloves with skin removed.

Cover lentils with water.

Bring to a boil, reduce flame and simmer for 25-35 minutes until lentils are tender but not mushy. It might be necessary to add a little more water during the cooking process as lentils absorb the water.

When lentils are tender, drain.

Pick out onions and garlic, discard.

Peel cucumber, slice lengthwise and remove seeds. Dice into small pieces about the size of a lentil.

Dice the red onion to the same size as well.

Chop parsley and mint.

When lentils are cool, combine with the above ingredients.

Juice the lemon and combine with double the amount of olive oil (1 part lemon juice/2 parts olive oil) and dress salad.

Season with salt and pepper.
