Easy Pumpkin Bars

Ingredients
- 1 tsp baking powder
- ½ tsp baking soda
- 8 oz canned pumpkin puree
- 2 large eggs
- ½ cup granulated sugar
- 1 tsp ground cinnamon
- ½ cup light brown sugar
- ½ tsp pumpkin pie spice
- ½ tsp salt
- 2 tsp vanilla extract
- ½ cup vegetable oil
- 1 cup white whole wheat flour

Preparation

In a medium mixing bowl.

Combine flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice with a whisk.

Set aside.

In a large bowl, beat eggs until combined.

Whisk in sugars and oil.

Add pumpkin and vanilla and stir together.

Whisk the flour mixture into wet ingredients.

Stir until you can't see any flour.

Let the batter rest while the oven is heating.

Heat oven to 350F degrees.

Spray a 9 x 13 baking pan with nonstick cooking spray.

Pour batter into the pan. Once the oven is heated, place the pan in the oven and bake for 20 minutes.

Cool pan on baking rack.

Tomato And Bacon Pizza With Rice Crust

Ingredients
- 2 bell pepper, sliced
- 2 cups cooked rice
- 1 egg
- 1 teaspoon Italian seasoning, optional
- 2 cups mozzarella cheese, shredded
- 3 tomatoes
- at least 6 strips of turkey bacon, cut into 2 inch pieces

Preparation

Preheat the oven to 400F.

To make rice crust, mix ingredients in a bowl.

Press onto a greased pizza pan (10 inch) evenly.

Spread bacon, tomatoes, pepper and mozzarella cheese on top of rice crust.

Bake for 20 minutes or until the cheese melts.

Slice and serve warm.

Grilled Ham, Cheese And Roasted Red Pepper Panini

Ingredients
- 4 slices bread
- 4 slices ham
- 4 slices cheese
- 1/2 cup roasted red pepper strips, drained
- 1/2 cup fresh basil leaves or fresh baby spinach leaves
- 2 tablespoons butter

Preparation

Evenly disperse cheese, ham, the red pepper strips, and basil or baby spinach between the two sandwiches.

Spread the outside of sandwiches with the softened butter.

Grill sandwiches on a panini grill, in a saute pan or on a griddle until toasted and crisp.

Mediterranean-inspired Tuna Almond Whole-wheat Spaghetti

Ingredients
- 4oz whole wheat spaghetti
- 2 tbsp chili oil
- 1/2 white onion, chopped
- 5 oz can tuna
- 0.5 oz almonds, sliced
- 1/2 cup roughly chopped Italian parsley
- 1 tbsp lemon oil
- 1 teaspoon chili flakes
- Parmesan
- a pinch of salt

Preparation

Start with a boiling pot of water for the spaghetti.

Heat up chili oil in a pan over medium heat.

Add the chopped onion.

Cook until almost translucent.

Drain the can of tuna (ideally water packed) and add it to the pan until it is thoroughly warmed through.

Add the chopped parsley and stir for 2 minutes.

Add chili flakes and a pinch of coarse salt to taste.

Take it off the heat.

Drain the spaghetti and add it to the pan and toss with tongs.

Serve and sprinkle with sliced almonds, a little more chopped parsley, and rough shavings of Parmesan cheese.

Drizzle with lemon oil.

Double Decadence Dark Chocolate Ice Cream

Ingredients
- 8 ounces crème fraiche or sour cream
- 8 ounces good-quality dark chocolate, melted
- 2 tablespoons Dutch-process cocoa, sieved
- 9 egg yolks
- 1 cup roasted hazelnuts, skins removed, coarsely chopped
- 1/2 cup sugar
- teaspoon scraped seeds of 1 vanilla bean or 1 vanilla paste
- 2 1/2 cups whipping cream
- 2 tablespoons Frangelico

Preparation

Whisk yolks, sugar, vanilla seeds and Frangelico in a heatproof bowl over a saucepan of simmering water until mixture is tripled in volume, thick and pale and holds a ribbon (4-5 minutes).

Remove bowl from heat and continue whisking until cooled (2-3 minutes).

Add chocolate and cocoa and mix to combine.

In another bowl whisk together cream and creme fraiche until blended.

Add to the chocolate mixture.

Pour into a container, cover and refrigerate at least 2 hours or overnight.

Freeze mixture in an ice cream maker for approximately 20 minutes, it will still be quite soft.

Add the chopped hazelnuts right at the end, just until mixed through.

Then transfer to an airtight container and put in the freezer to firm up.

This incredibly moist, expertly spiced carrot bread is worth the try! 🥕🍞

Carrot-sesame Seed Bread

Ingredients
- 1 packet active dry yeast, 7 gm
- 2.5 cups all purpose flour
- 1.5 cups shredded carrots, about 3 whole carrots
- 1.5 tbsp olive oil
- 8 tbsp orange juice
- 1.5 tsp salt
- 1/3 cup sesame seeds plus more for garnishing
- 1 cup spelt or whole wheat flour
- 10 tbsp warm water

Preparation

In a bowl, add carrots, orange juice, warm water and yeast and let it sit for 5 minutes. To it add olive oil, both flours and salt. Knead it into a tight dough. Cover and let it sit for 10 minutes.

Put oil on the working surface and knead dough lightly for about 10 seconds.

Let it sit covered for an hour.

Clean oil from the working surface and sprinkle some flour. Knead the dough for a few seconds.

Roll it tightly and tuck both the ends at the bottom and lay it in a parchment paper lined loaf pan with sides tucked on the bottom. Cover and let it sit for another hour.

Preheat the oven to 400F degrees.

Bake uncovered for 50 minutes.

Take it out of the pan once cooled and let it cool further.

Store covered for up to 3-4 days.

Fantastic dish, super delicious! 🥔🌿🍮

Potato And Leek Gratin

Ingredients
- 2 tablespoons unsalted butter, plus more for greasing the pan
- 2 large leeks, trimmed and halved lengthwise
- 1 1/2 pounds Yukon Gold potatoes, peeled
- 1 teaspoon Kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 thyme sprigs
- 1 cup heavy cream
- 1 garlic clove, finely chopped
- 1 bay leaf
- 1/4 teaspoon freshly ground nutmeg
- 3/4 cup Gruyère cheese, grated.

Preparation

Heat oven to 350 degrees and butter a 2-quart gratin dish.

Wash the leeks and slice thinly crosswise.

Using a mandoline (or knife), slice the potatoes into 1/8-inch thick rounds.

Toss with 3/4 teaspoon salt and 1/4 teaspoon pepper.

Layer the rounds in the gratin dish.

Melt 2 tablespoons butter in a large skillet over medium heat.

Add leeks, remaining salt and pepper, and thyme.

Cook, stirring, until leeks are tender and golden, about 5 minutes.

Discard thyme and place the leeks over the potatoes.

Add cream, garlic and bay leaf to the skillet, scraping up browned bits of leeks from the bottom of the pan.

Simmer gently for 5 minutes.

Stir in nutmeg.

Pour the cream over the leeks and potatoes and top with the Gruyere.

Cover with aluminum foil and bake for 40 minutes, uncover and bake until the cheese is bubbling and golden, 15 to 20 minutes longer.

Let cool slightly before serving.

Crunchy sweet and packed with tasty nutrients! 🥣🥥🍪

Oatmeal Coconut Cookies

Ingredients
- 100 grams rolled oats
- 75 grams dried flaked coconut
- 120 grams all-purpose flour
- 100 grams caster sugar
- teaspoon salt
- 100 grams butter
- 25 grams Inverted sugar syrup (or corn syrup)
- 1 teaspoon baking soda
- 2 tablespoons boiling water

Preparation

Heat the oven to 150C/300F and prepare two baking trays covered with parchment. In a large bowl, stir together the oats, coconut, flour, sugar and salt.

Meanwhile, melt the butter and syrup together in a small pot over low heat.

Stir the baking soda into the boiling water, then stir this into the butter and syrup mixture. And pour all of it over the flour mixture.

Mix well, then shape the mixture into 32 balls and place onto the prepared baking sheets. Press down to flatten the cookie balls with your palm.

Bake for 12-15 minutes, switching the pan around if need to for even baking, until the cookies are golden brown.

Leave them on the baking trays for 5 minutes before removing them with a spatula to cool on a rack.

Nicely sweet and excellent for snack'in! Sweet delight indeed! 🌰🍫

Almond Joy Delights

Ingredients
- 3/4 cup roasted salted whole almonds
- 1 1/2 cups flaked coconut
- 1/2 cup canned sweetened condensed milk (not evaporated)
- 1 package (16 ounce) Pillsbury Ready to Bake refrigerated sugar cookies
- cup unsweetened baking cocoa
- cup milk chocolate chips

Preparation

Let cookie dough stand at room temperature for 10 minutes to soften.

Reserve 20 almonds; set aside. Chop remaining almonds.

In a medium bowl, stir chopped almonds, coconut and condensed milk until well blended. Refrigerate mixture 25 minutes for easier handling.

Heat oven to 350F degrees.

In a large bowl, knead cookie dough and cocoa with hands until well blended. Keep covered with plastic wrap, shaping cookies one at a time.

For each cookie, press 1 rounded tablespoon of dough into a 3-inch round.

Place 1 tablespoon coconut mixture in the center of each round. Wrap dough around filling, pressing edges to seal; shape into ball.

On an ungreased cookie sheet, place balls 3 inches apart. With fingers, press each ball into 2-1/2-inch round. Press 1 whole almond on each cookie.

Bake for 9 to 12 minutes or until puffed and edges are set.

Immediately remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.

In a small resealable freezer plastic bag, place chocolate chips; seal bag.

Microwave on high temperature for 30 to 60 seconds or until softened.

Gently squeeze the bag until chocolate is smooth; cut off a tiny corner of the bag.

Squeeze bag to drizzle chocolate over cookies.

Let stand until chocolate is set. Store in an airtight container.

Wonderfully flavorful & soo good! 🐔🍲

Masala Raisin Chicken

Ingredients
- 400g chicken
- 1 1/2 tbsp (or as needed) plain chili powder (add water and mix into a thick paste)
- 2 tbsp dried raisins
- 1/2 tbsp ginger paste
- 1 tsp garlic paste
- 1/2 tbsp onion paste
- 1 tomato - chopped
- spices - 1 cinnamon, 1 star anise and 3 cloves
- 2-3 sprigs curry leaves
- 3 tbsp oil
- salt to taste

Preparation

Heat oil and fry spices with ginger, garlic and onion paste. Just for 1-2 minutes.

Add chili paste and continue to fry over low heat till oil splits.

Put in chicken, tomato, curry leaves and raisins. Season with salt.

Add a bit of water if needed to cook the chicken.

Continue to stir till everything comes together; a thick gravy coated over the chicken pieces.

Crispy & delicious! Perfect for a one pan, low prep dinner! 🍗🍲

Italian Style Baked Chicken Thighs

Ingredients
- 8 skin on chicken thighs
- 1 large vine ripe tomato
- 1 small red onion
- 5 garlic cloves
- handful of Italian parsley
- Juice of 1 lemon
- salt
- black pepper
- olive oil
- grated Romano cheese

Preparation

Preheat the oven to 350F degrees.

Place the tomato, red onion, garlic, parsley, and lemon juice in a food processor and give a few good chops.

Place the chicken thighs in a baking pan and sprinkle the tops of the skin with salt and pepper and a drizzle of olive oil.

Top the thighs with the mixture from the food processor.

Bake for 45-50 minutes.

Grate Romano cheese over the thighs when they are finished cooking.

A soup that is savory, silky & garlicky good! 🥣🌿🧅

Hummus Soup

Ingredients
- 4 cups of water
- 4 tablespoons of olive oil, approx
- 3 cans of organic chickpeas, drained
- 6 tablespoons of sesame tahini
- 3 cloves of garlic, minced
- 2 cups whole lemons, cut up and squeezed into the soup or ½ of lemon juice
- 2 teaspoons of cumin
- 2 teaspoons of turmeric
- 4 teaspoons of curry powder, approx
- 4 teaspoons of cinnamon
- of sea salt and pepper

Preparation

Place water into a medium-sized pot.

Chop up the garlic and add it to the pot, cover, and let boil for 10-15 minutes.

Add the chickpeas and tahini, along with the salt, pepper, cumin, curry, cinnamon, and tumeric and let cook for another 20 minutes.

Turn off the flame and blend, either with a hand blender or regular one.

Top off with various seasonings and a drizzle of tahini for a garnish.
