Hot jars come out of boiling water, and are filled with boiling syrup and closed. As they cool, the liquid shrinks and creates a vacuum, sealing the jars until they're opened.

What this means is that when one isn't quite as full as the others, there's no adjusting to level them out. Guess I'm just going to have to make my own lavender lemonade. *oh no*!!
