I'm not a huge bread fan but do like it occasionally with soup, etc.

This "wonder bread" is made with egg whites, Greek yogurt, and protein powder isolate.

Bizarre, right?

Neither heavy in fat nor carbs, it's perfect. And just look at it!? It's like white bread.

Our Story

Hello there! My name is Jenny Keffer and I am an Autoimmune Paleo Coach which is a fancy way of saying that I am your personal tour guide on your AIP journey. By a sheer twist of fate, I found out that I had Celiac Disease. I didn’t have stomach issues or any symptoms for that matter. I was taken aback and scared too. I couldn’t believe that I had an autoimmune disease. I quickly realized that I knew next to nothing about Autoimmune Disease BUT I had offered nutritional therapy for years. I discovered the Autoimmune Paleo Protocol and felt better than I had in years....my weight regulated itself, my skin cleared, my head cleared, my lifelong anxiety lessened and my entire mood lifted. Add to all of that an energy and well-being that I didn’t even realize I had been missing. An amazing thing happened....my body was healing.

As awesome as AIP was, it was quite honestly, CONFUSING (and I love food and wasn’t new to the world of whole food!) I thought, if it is confusing to me, it must be to others as well. When I heard about the training to become and AIP Certified Coach, I signed up immediately. I am here to help those with autoimmune disease navigate the AIP Protocol. It is an elimination diet but also a lifestyle. Really, at it’s heart, AIP is a healing journey. It’s been incredible for me and I am honored to share it with you. Here’s to your healing and a whole new world.
