Halfway check-ins are one of my favorite parts of working with clients 🤍

At the 4-week mark in my 8-week program, we pause to reflect on what’s working, celebrate the wins (big *and* small), and get really intentional about the second half. It’s not just about progress on paper—it’s about how things actually feel in your day-to-day life.

Savannah shared that what’s been going really well is finally understanding the *why* behind her food choices—and actually being able to implement it without feeling overwhelmed. And honestly, this is something I hear all the time from picky eaters. There’s often this fear that nutrition means completely overhauling your diet… when in reality, it’s about building on what you already like and making it work for you.

This is where confidence starts to build, habits start to click, and everything becomes more sustainable 🙌

I have been making a variation this recipe EVERY week and I just had to share 🙌 Be sure to save this post - full recipe below ⬇️

Roasted Salmon Chimichurri Bowls 🍚
Servings : 2

1️⃣Preheat the oven to 425. Roast 2 (5oz) pieces of salmon topped with black pepper for 15-17 minutes until salmon reaches 145 degrees.
2️⃣ Meanwhile slice 1 zucchini into half moons. Half 1.5 cups of cherry tomatoes. Cut corn off 1 cobb.
3️⃣Add 1tbsp avocado oil to a pan and heat over medium heat. Swirl to coat the pan. Add the veggies + black pepper and sauté 5-7 minutes until zucchini is browned.
4️⃣ Defrost 1 cup of frozen cooked brown rice in the microwave. Add a 1/2 cup to each bowl.
5️⃣ Split equal amounts of the veggies between the bowls, and top with 1 piece of salmon and 2 tablespoons Chimichurri sauce. Enjoy!!

NOTE: I made this last week with grilled sirloin and it was amazing. Next week I’m going to grill chicken breasts! Shrimp would be wonderful too.

I was on Fox Carolina News with Kari Beal talking about the new 2025–2030 Dietary Guidelines for Americans, but we got cut for time — so we only covered fiber and saturated fat (two big ones, but definitely not the whole story).
