Soup season is here and nothing warms the soul like a big bowl of homemade Pozole Rojo 🌶️🍲. Packed with tender pork, hominy, and a rich red chile broth, it’s the ultimate comfort food with so much flavor. Here’s how you can make it at home ⬇️

Ingredients:
• 3 lbs pork shoulder, cut in 1-inch cubes
• 4 dried ancho or guajillo chiles (or mix), soaked & seeded
• 2 cans hominy, rinsed
• 1 yellow onion, chopped
• 6 garlic cloves (divided)
• 8 cups chicken broth
• 2 bay leaves
• 2 tsp oregano
• 1 tsp cumin
• Salt & pepper to taste
Directions:
1. Soak chiles in hot water until soft. Blend with 2 garlic cloves + a little soaking water, then strain into a smooth paste.
2. In a large pot or Dutch oven, sear pork until golden. Remove and set aside.
3. Sauté onion + remaining garlic until fragrant. Return pork to pot.
4. Add chile paste, hominy, spices, and broth. Stir well.
5. Bring to a boil, then reduce heat and simmer 1½–2 hrs until pork is tender. Remove bay leaves.
6. Serve hot with toppings: shredded cabbage, radish slices, avocado, cilantro, Cotija cheese, and lime wedges.
