Ingredients
For the casserole:
• 1 lb fresh green beans, trimmed and halved
• 2 tbsp butter or avocado oil
• 8 oz sliced mushrooms
• 3 cloves garlic, minced
• 1 ½ cups chicken broth
• 1 cup heavy cream or coconut cream
• ½ tsp sea salt
• ¼ tsp black pepper
• ½ tsp onion powder
• ½ tsp thyme
• Xanthan gum or arrowroot to thicken (optional)
For the topping:
• 1 ½ cups almond flour
• 1 small onion, very finely diced
• 2 tbsp melted butter
• ½ tsp sea salt
Instructions
1. Blanch the green beans
• Boil water, add green beans, cook 5 minutes.
• Drain and set aside.
2. Make the cream sauce
• Sauté mushrooms in butter/oil 5–7 minutes.
• Add garlic 1 minute.
• Stir in broth, cream, and seasonings.
• Simmer until slightly thickened (add xanthan or arrowroot if you want it thicker).
3. Combine
• Fold green beans into the mushroom sauce.
4. Make the topping
• Stir almond flour, diced onion, melted butter, and salt until crumbly.
5. Bake
• Spread casserole mixture in a baking dish.
• Add topping.
• Bake at 350°F for 25–30 minutes until golden and bubbly.
