Egg White Bites (low cal • high protein)

These Low calorie, protein packed egg white bites are a perfect, low cost for meal prepping option for those needing a fast microwaved, on the go breakfast! Weight loss takes consistency and it’s crucial to eat breakfast while on your GLP-1 medication to stimulate fullness and give you the nutrients and energy to push through the day.

Estimated Nutrition/Macros:

Calories: ~42-48 | Protein: 5.5-6.5g | Carbs: 0.8g | Fat: 1.7-2.2g
3 bites = ~125-145 cal, 16-20g protein.

Makes ~16 bites

Ingredients:
∙ 2-3 whole eggs
∙ 1 1/2 cup egg whites (carton)
∙ 1/2 cup full fat cottage cheese
∙ finely Diced red pepper
∙ finely Diced green pepper
∙ finely Diced yellow onion (optional)
∙ Crumbled turkey sausage (cooked) - I add crushed red pepper for heat)
∙ Low fat mozzarella cheese, shredded
∙ Fresh spinach, chopped
∙ Salt & pepper to taste

Instructions:
1. Preheat oven to 325°F
2. Blend eggs, egg whites, and cottage cheese until smooth
3. Grease silicone muffin molds well
4. Distribute fillings evenly into each cup
5. Pour egg mixture over fillings, filling each cup about ¾ full
6. Bake 22-28 minutes until set in the center and just pulling away from edges
7. Cool 5 minutes before removing
Macros (per bite): ~42-48 cal | 5.5-6.5g protein | 0.8g carbs | 1.7-2.2g fat

To freeze: Flash freeze on a baking sheet for 1 hour, then transfer to a zip-lock bag. Keeps 3 months. Reheat from frozen 60-90 seconds in microwave.​​​​​​​​​​​​​​​​
