German Skillet Dinner

3 T butter or margarine
1/2 cabbage , chopped
2/3 cup uncooked rice (minute rice works well)
1 med onion, chopped
2 lbs hamburger
Tomatoes
1/3 cup water
Salt and pepper to taste
Garlic powder to taste

Melt butter in skillet, layer cabbage, uncooked rice, onion, raw crumbled hamburger, salt and pepper, and garlic powder then tomatoes. Cover with lid and simmer on low for 25-35 minutes until rice, cabbage and burger are done. Do not stir or lift lid until done.

Remember what the Tin Man said in the “Wizard of Oz” after he finally got a heart….

“Now I know I've got a heart because it’s breaking.”

If someone you love has passed away, your heart is probably broken. So how do you live with a broken heart? The answer isn’t how you fix it or move beyond it. The skill is learning to live with your grief as an ongoing way of being in the world. It’s the way you honor that which you love.

What I’m proposing is that, with enough healing, living with heartbreak can become natural and very normal.

From my personal and professional experience, I can tell you that as you embark on your healing journey, you’ll start crying a whole lot more. Not just to clear pain, but for the simplest of everyday reasons, and out of nowhere. You’ll cry when you see a bird, a can of paint, an apple, or even the shape of a cloud.

Random things will make you cry.

The heart is designed to grieve, it wants to grieve. It has to grieve!

Especially when it’s broken.

This is the price you pay for love. The loss of the life you thought you had, the life you once knew and held so dear. Loss of a dream you believed was true.

But you can also find and feel grief in opening your heart. Opening it to love and to new possibilities. Opening it to what the future holds.

Isn’t that what life is all about? Endings and beginnings, closings and openings? The heart was designed to navigate you through this forever winding adventure called life. But you have to be willing to feel and to live with a broken heart.

Here’s the thing... You can learn to live with your broken heart by befriending your grief.

You can discover the love that still exists around you and share that love with others who are also living with a broken heart.

Kick-n Chicken w/Glazed Green Beans & Rice

2 cups white or brown rice
3 lbs boneless chicken tenderloins (wash and trim fat)
2 bags of frozen natural cut green beans (12 oz.)
1 1/2 tablespoons minced garlic
3/4 cup of organic coconut oil
Weber Kickn Chicken seasoning
Weber Garlic and Herbs seasoning
1/4 cup agave
3 tablespoons of worcestershire sauce
1 cup water

Cook rice according to directions, cover and sit to side. Heat heavy skillet add ½ cup of coconut oil. Season chicken by coating well (you want to see the flavor) with both seasonings. Cook until edges turn white, turn continue to cook until all pink has gone and chicken breaks with a fork. Reduce heat to warm. (I use a gas stove). Meat will continue to cook but not dry out. In heavy skillet pour ¼ cup of coconut oil, heat. Add green beans and blanch until the color is no longer bright green. Add agave; stir and coat beans well. Add worcestershire sauce and garlic, stir well. Add water and mix well. Cover and bring to a low boil. Cook, stirring occasionally for 5-10 minutes (depending on the doneness you want your beans) you want to let all the liquid cook down. Spoon rice in long casserole dish, cover rice with green beans, place tenders in row by making groves in beans/rice.

You always hear the usual stories of pennies on the sidewalk being good luck, gifts from angels, etc. This is the first time I've ever heard this twist on the story. Gives you something to think about.
Several years ago, a friend of mine and her husband were invited to spend the weekend at the husband's employer's home. My friend, Arlene, was nervous about the weekend. The boss was very wealthy, with a fine home on the waterway, and cars costing more than her house.
The first day and evening went well, and Arlene was delighted to have this rare glimpse into how the very wealthy live. The husband's employer was quite generous as a host, and took them to the finest restaurants. Arlene knew she would never have the opportunity to indulge in this kind of extravagance again, so was enjoying herself immensely.
As the three of them were about to enter an exclusive restaurant that evening, the boss was walking slightly ahead of Arlene and her husband.
He stopped suddenly, looking down on the pavement for a long, silent moment..
Arlene wondered if she was supposed to pass him. There was nothing on the ground except a single darkened penny that someone had dropped, and a few cigarette butts. Still silent, the man reached down and picked up the penny.
He held it up and smiled, then put it in his pocket as if he had found a great treasure. How absurd! What need did this man have for a single penny? Why would he even take the time to stop and pick it up?
Throughout dinner, the entire scene nagged at her. Finally, she could stand it no longer. She casually mentioned that her daughter once had a coin collection, and asked if the penny he had found had been of some value.
A smile crept across the man's face as he reached into his pocket for the penny and held it out for her to see. She had seen many pennies before! What was the point of this?
'Look at it.' He said. 'Read what it says.' She read the words ' United States of America '
'No, not that; read further.'
'One cent?' 'No, keep reading.'
'In God we Trust?' 'Yes!' 'And?'
'And if I trust in God, the name of God is holy, even on a coin. Whenever I find a coin, I see that inscription. It is written on every single United States coin, but we never seem to notice it! God drops a message right in front of me telling me to trust Him? Who am I to pass it by? When I see a coin, I pray, I stop to see if my trust IS in God at that moment. I pick the coin up as a response to God; that I do trust in Him. For a short time, at least, I cherish it as if it were gold. I think it is God's way of starting a conversation with me. Lucky for me, God is patient and pennies are plentiful!
When I was out shopping today, I found a penny on the sidewalk. I stopped and picked it up, and realized that I had been worrying and fretting in my mind about things I cannot change. I read the words, 'In God We Trust,' and had to laugh. Yes, God, I get the message.
It seems that I have been finding an inordinate number of pennies in the last few months, but then, pennies are plentiful! And, God is patient.

Garlic Lemon Butter Parmesan Shrimp

1 lb extra large or jumbo shrimp
1 stick butter
1 tbsp italian seasoning
2/3 cup grated parmesan cheese
1 lemon
1 tbsp minced garlic

Clean and devain the shrimp. In a medium sauce pan, melt butter and sauté garlic for a minute. Add shrimp and sprinkle on Italian seasoning. Cook covered for 2 minutes. Squeeze halved lemon over shrimp and then sprinkle on Parmesan cheese. Cook for another two minutes or until shrimp turn white.

An elephant and a dog became pregnant at same time. Three months down the line the dog gave birth to six puppies. Six months later the dog was pregnant again, and nine months on it gave birth to another dozen puppies. The pattern continued.

On the eighteenth month the dog approached the elephant questioning, "Are you sure that you are pregnant? We became pregnant on the same date, I have given birth three times to a dozen puppies and they are now grown to become big dogs, yet you are still pregnant. Whats going on?". The elephant replied, "There is something I want you to understand. What I am carrying is not a puppy but an elephant. I only give birth to one in two years. When my baby hits the ground, the earth feels it. When my baby crosses the road, human beings stop and watch in admiration, what I carry draws attention. So what I'm carrying is mighty and great."

Don't lose faith when you see others receive answers to their prayers. Don't be envious of others. If you haven't received your own blessings, don't despair. Say to yourself "My time is coming, and when it hits the surface of the earth, people shall yield in admiration."

Melt In Your Mouth Chicken

4 boneless chicken breast, halves
1 cup non-fat plain Greek yogurt
1⁄2 cup parmesan cheese, freshly grated
1 1⁄2 tsp salt
1⁄2 tsp black pepper, ground
1 tsp garlic powder

Mix yogurt, cheese and seasonings. Spread mixture over chicken breast and place in baking dish. Bake at 375°F for 45 minutes.

Low Carb Crack Slaw (Keto and Paleo friendly)

1 lb Ground beef or turkey (your choice of meat)
1 bag Cole Slaw Mix
2 Green Onion
1 1/2 t minced garlic
1 1/2 T Soy Sauce (or less to taste)
3/4 T sesame oil
1 t crushed red pepper flakes (optional)
1 t ground ginger

Ground meat in pan. In separate pan put sesame oil, soy sauce, chopped up green onion and chopped up garlic together and stir fry it until tender. Add the cole slaw mix, crushed red pepper and ground ginger and cook until tender. Once done drain the excess fat off of the meat and add it to the pan with the rest of the ingredients and stir.
EDIT: If you want to make this Vegan, add 1/2 C macadamia nuts instead of meat. Do you have a nut allergy? Try oyster mushrooms.
Use Liquid Aminos to replace Soy Sauce. You can also sprinkle h**p seeds on top for extra protein.
