MEDITERRANEAN LETTUCE WRAPS (4 servings)
1/4 cup tahini
1 tsp lemon zest
1/4 cup fresh lemon juice
3/4 tsp sea salt
1/2 tsp paprika
1/2 cup red bell pepper
1/2 cup shallots
12 large bibb lettuce
1/4 cup almonds
2 tbsp parsley
32 oz chickpeas
1/4 cup extra-virgin olive oil
Directions:
➡️ Whisk tahini, oil, lemon zest, lemon juice, salt, and paprika in a large bowl. Add chickpeas, sliced jarred roasted peppers, and thinly sliced shallots. Toss to coat.
➡️ Divide the mixture among lettuce leaves (about 1/3 cup each). Top with roasted almonds and chopped fresh parsley. Wrap the lettuce leaves around the filling and serve.
