Fall brings hearty meals, tailgates, and holiday prep but food safety should always be on the menu:

- Keep hot foods hot (above 140Β°F)
- Refrigerate leftovers within 2 hours
-Wash fresh produce, even if you plan to cook it
- Use a food thermometer for meat and poultry

Simple steps like these help prevent foodborne illness and keep your meals safe and delicious. More tips: https://pathtotheplate.tamu.edu and https://fightbac.org/food-safety-basics/the-core-four-practices/

What’s the difference between a complete and an incomplete protein?

A complete protein is defined by the FDA as one that contains sufficient amounts of all nine essential amino acids. These amino acids cannot be naturally produced by our bodies, so must be eaten as part of a healthy diet. Incomplete proteins are those that are missing one or more of these amino acids. This can be a struggle when replacing animal proteins with plant-forward proteins because many of our plant foods fall into the incomplete protein category. The good news is, you can make an incomplete protein complete by pairing complementary proteins!

A complementary protein is a combination of incomplete proteins (like legumes with grains, nuts or seeds) that are paired together to fill in the gaps of the missing amino acids and create a complete protein. This works because foods like legumes and grains are missing different amino acids, so pairing them ensures you get all nine in your diet.

Examples of these pairings include:
-Peanut butter and whole-grain toast
-Red beans and brown rice
-Hummus and Pita Bread
-Almond butter and oatmeal
-Soy milk with whole grain cereal
-Cornbread and Kidney Bean Chili

Look into complementary proteins and see which other pairings you can come up with using plant-forward foods!
